Commercial Description:
The origins of this Saison go back to the 1800’s when saisons brewed in Wallonia were rugged, unrefined, and edgy. Going back to the original roots of Saison, we used a large amount of ancient spelt grain, vienna, and raw wheat. Another first for Colorado Springs, this beer was fermented in primary with wild Brettanomyces and lactobacillus, and a blend of two Saison yeasts to create a lightly sour, extremely aromatic, and spicy yeast profile. Being a ’Provisional’, this beer was both dry hopped, aged, and naturally carbonated for authenticity.

GABF 2009. Pours clear light yellow with an average, frothy white head, mostly lasting with good lacing. Aroma is heavy malt (cookie, hay, straw, cereal, meal), light hop (flowers, herbs, grass), heavy yeast (sweat, horse blanket, barnyard, cheese, earth, musty) with notes of grape, apple, pepper. Medium bodied, sticky texture, lively carbonation, and a chalky finish. Long duration, light sweetness, acidity, and bitterness. Brettanomyces character.

Daft at SBR. Tasted 7/11/09. Pours a thin head, over a cloudy, pale yellow (SRM 5) body.....nose is ginger, clove, lemongrass...taste is strongly of ginger, mild malts...mouth feel is light. A remarkable beer.

Crushed with Jakebra at the Colorado Springs Saison Festival. Woo. Lavender dominates the nose and flavor. Kinda polleny, flower-petal throughout. Interesting, original, and tasty.
