Commercial Description:
Née de la rencontre fortuite d’une stout forte et d’une fermentation d’abricots du Valais qui jamais n’atteignit l’alambic du distillateur auquel elle était destinée, notre Oud Bruin (flamand pour "vieille brune") est une interprétation assez peu orthodoxe de ses cousines belges.
Elle en garde cependant le délicat équilibre aigre-doux, entre une solide ossature maltée assise sur des malts, aux notes caramélisées, chocolatées, rôties et fruitées, dans laquelle vient se fondre le vin d’abricot avec son acidité lactique, ses notes de cuir et d’étable liées aux levures sauvages, et une discrète note d’abricot.
La finale est légèrement amère et le tout se déroule tout en harmonie sur le palais.
Une bière unique, d’une grande buvabilité mais joliment complexe, entre douceur, fruité et acidité. Elle se mariera avec l’agneau, le canard, les moules, les crustacés ou des fromages à pâte molle ou mi-dure.
Série limitée de 1.200 bouteilles de 75cl, 7.2% d’alcool/volume, 35 unités internationales d’amertume (IBU).

Brown bottle, 7,5 dl, via Importations Privées Bièropholie (merci Hughes!), savoured on November 1 2009; eye: dark brown with mahogany hue, opaque, slight ring of beige head, no lacing; nose: sourness, cherry, light roasted malt, slight alcohol, slight Brettanomyces; mouth: sourness, cherry, caramel, malt, slight Brettanomyces, finale in sourness with presence of caramel, medium body, average carbonation, slightly sweet and lactic, mildly sour; overall: interesting FRANÇAIS Bouteille brune, 7,5 dl, via Importations Privées Bièropholie (merci Hughes!), savourée le 1 novembre 2009; œil : brune foncée avec des reflets acajou, opaque, petit anneau de mousse beige, pas de dentelle; nez : aigreur, cerise, léger malt torréfié, très léger alcool, très léger Brettanomyces; bouche : aigreur, cerise, caramel, malt, très léger Brettanomyces, finale en aigreur avec présence de caramel, corps moyen, carbonatation moyenne, légèrement sucrée et lactique, moyennement aigre; en résumé : intéressante

Bottle. Reddish brown with a medium tan head. Fruity aroma with faint plum and a sour kick. The flavour is sweet malty with dark fruit and light sour. Nice one.

Bottle at Papsø’s - Thanks. Clear brown - offwhite head. Sourness, red berries, vinegar, oakey, rubber, wood, blood, metallic notes, lactic, roasted, dark berries, dried dark fruits.

750ml bottle, dark amber-mahogany color, with a thick beige head, leaving some laces, mild balsamic vinegar, faint spicy nutmeg, fruity sour, tart cherries, yeasty, light bretty nose, with some faint barnyard, leathery accents and light toasted, caramelized malt, toffeeish notes in the aroma follows through on a medium-bodied palate with a yeasty, mild bretty, woody, oaky, acidic, light sour fruity cherryish, blackcherry character with a faint mild marmalade, apricot tartness, with a mild toasty, caramel malt, toffee accent and an iron-like kiwi, woody, oaky note, leading towards a sweet and sour, acidic, fruity, winey, cherry, bretty, dry green apple finish.

Bottle at Papsø. Hazy red brown coloured with a medium sized off white head. Light acidic aroma of bubble gum, wood and red wine. Light acidic flavour of wood and red wine. Tart finish.

Cloudy dark amber with a tiny beige head. Sour aroma with lacto, sour berries and roasted malt. Sour flavour with lacto, roasted malt, sour berries and woody notes. Finished sour. Nice one.

Bottled. Amber coloured. Unclear. Dense light brown head. Sourness, berries, grape, light fruits in the aroma. Flavour is very sour, grapy, has a caramelly and sweet note and some berries. Medium to full bodied. Grapy and sour end. Quite delicious.

Bottled. A hazy deep red beer with a lazing light tan head. The aroma has strong notes of lemon, brettamyces, and some caramel. The flavor is sour with notes of wood, brettanomyces, over ripe berries, and lemon, leading to a tart finish. Thanks fiulijn for giving this.
