Commercial Description:
This unique Barley Wine Style beer is brewed iwth 57% wheat, 43% barley, and German hops. We boil the 25.2 Plato wort for three hours. Then we start the fermentation with our Hefe Weizen yeast and finish it with a Scottish Ale yeast. Bare Tree is then oak aged for over one year before its release. The resulting product is extremely complex with flavors of caramel, melon, apricot, vanilla, oak, black pepper, and subtle banana. The flavors come in large part from the raw ingredients and this will vary from year to year. Bare Tree is ready to drink now, but like wine, will age in the bottle for the next several years. So, whether you decide to enjoy a bottle now or wait many years, the Two Brothers family offer a toast: "With every bare tree lives the promise of a new life." CHEERS. The 2002 vintage was aged in whisky and wine barrels.

Had this on tap at Flossmoor Station. Very nice to finally experience a heavy version of a Hefe-Weizen. This had the tradtional aroma of cloves and banana, but tasted much more malty and full-profiled than a regular thin bodied hefe. This is a great twist on a hefe, and one that’s definitely worth the try if you’re a fan of hefe’s.

Guest tap at Flossmoor Station. Rating from a taster, but just so I’ll know what to expect when I open my older bottle for a fuller rating. Cloudy yellow body, head is off-white, parfait style. Slight alcohol hotness to start. Wheat is very much up front. Some hard candy note. A little thick and chewy, like trying to eat the grains from a decoction mash. An amped-up 312.

Pours a dark amber in color with ruby highlights. Decent amount of rocky head on the pour. Smell is fruity and sweet. Taste has more of the fruit flavor in it as well as some yeast. I have to be perfectly honest. This tastes more like a belgian tripel than it does a barlewine. Smooth and a easy drinker considering the ABV. Good beer.

Pours a golden orange color with a small white frothy head. Aroma is spicy and fruity with quite a large variation of fruits that become apparent as the beer warms. Flavor is also very fruity with some vegetable flavors like sweet corn that came through. Spicy finish yet still very smooth throughout. Very little carbonation. Medium body. This is a nice sipping barley wine, especially with the high alcohol, and definitely much different than your standard barley wine.

750 ml bottle, 2007 vintage. Pours a hazy orange with a big, dissipating head. Aroma of peaches, apricot, bananas, clove, spice, yeast. Fruity, yeasty flavor, with some melon and caramel notes. A bit of citrus in the finish. Mouthfeel is slick, medium bodied, and a lot of carbonation. I am shocked by the abv, as almost no alcohol is detectable. Very strange barley wine indeed, but quite enjoyable.

750ml Bottle (2007): Complex aroma. Smells of spices, yeast, wheat, pepper, cloves, and oak. Poured amber in color with a large, foamy, off-white head that diminished. Very hazy. Opaque. Complex flavor. Tastes of spices, banana, cloves, pepper, oak, and a little caramel. Medium body. Tingly, then chalky texture. Average carbonation. Clove, spice, and wheat finish is slightly dry. A strange barley wine. Alcohol is well hidden.

A 2006 Vintage, shared by BDR. From a 750 ml bottle pours a semi-hazy golden orange brew with a thick and lumpy off-white head that has some excellent retention and good lacing. Aroma of some banana esters, raisins, sweet apples, cloves and a touch of yeast. Taste is full bodied, lightly carbonated with flavors of sweetened multi-grained malt, bananas, yeast, cloves some apple sauce with spices and a touch of citrus. Finish is slightly metallic from the high alcohol presence with a sweet banana and apple aftertaste. Lots of flavors, yet quite enjoyable.

Bottle. Pours orange gold with a huge foamy off-white head. Laces the glass a ton. Potent citrusy aroma, with some funky clove notes. Quite potent and very weiss-like. Tart, citrusy with a full spicy bready character with hints of coriander. Full and creamy in the mouth. You would not know this is an 11% beer. I was not a big fan of the first wheatwine I tried but found this one to be quite good.
