Commercial Description:
Cane and Ebel is one of a series of special limited-run beers in styles that are more extreme or unusual. This unique red rye beer is full of hop flavor and aroma. We add 35 pounds of Thai palm sugar to each batch. The sugar does not add much sweetness to the beer, but rather a fruity and vanilla-like flavor. A new hop variety called Summit is really showcased here. This 18%AA hop is also very aromatic which gives a pungent citrus aroma. Then we heavily dry hopped the beer with Simcoe.

Bottle pours a clear mahogany with a small light tan head. Nice lightly woody caramel awoma. Brown sugar. Strong astringent bitter woody favor. Oxidized? Lightly roasted malts. Moderate lingering bitter and lively carbonation.

Bottle: Pours a mahogany color with a thin film of head. The nose is full of plum and spruce; grapefruity hops, light pine and a chewy raisin sweetness from the palm sugar, I’m not seeing vanilla though. The flavor is a bit startlingly dry and resinous with the sticky palm sugar and dusty hop resins. Summit is great, and the simcoe is nice to smell, but the combination is a bit lost in translation. Bottle. Sweet and resin-soaked hop aroma with a slight bready trail-off. Dark copper pour edging into mahogany, with a soapy off-beige head. Taste is bitter and resinous, drying out heavily and lengthily. Sugar really isn’t apparent here at all. Earthy, rye-ish accents. Light nuts with even fainter citrus, and a touch of caramel. Mellow, gentle spiciness, mixing well with the grainy notes. Medium body. Very drinkable (actually, quite quaffable!) and tasty, but in the end, this falls into the generic Ami Strong Ale category for good reason.

75 cL bottle, thanks to Papsoe. Pours hazy brown/amber with a huge white lacing head. Aroma is fruity aromahops predominantly. Flavour is slight fruity and somewhat mellow malty. End is slight soapy but still mellow flavoured.

Bottle. Cloudy orange brown coloured with a beige head. Aroma of caramel, fruits, yeast and overriped fruits. Sweet flavour of caramel, fruits, hops and pine needles. Hoppy finish.

Bottle. [Courtesy of Papsoe, quality tasting @ Papsoe] Huge creamy off-white head that really lasted. Good display of lacework. Light cloudy amber color. Notes of flowers, pine, grapefruit, caramel, hint of bread, grain, and some underlying peach like feel. Medium to full bodied with an alcoholic texture and a lively carbonation. Moderated sweet and bitter flavor. Dry and bitter finish. 28-09-2007

Bottled. A hazy orange beer with a thick light orange head. The aroma is sweet with notes of dusty hops, malt, as well as light berry notes. The flavor is sweet malty with primary notes of berries, leading to a dry bitter finish.
