Commercial Description:
It is a ~8.5% ABV Black Saison. We fermented it with a Belgian saison yeast until it hit about 7% then we added our house ale yeast to finish it. Once it was done fermenting, we added it to new American oak barrels with a medium-heavy toast. Then we spiked it with Brettanomyces Bruxellensis. The "Brett" is an isolated culture from Belgium that gives the classic barnyard, horse blanket character and pleasing tartness to lambic style beers. The tartness is mild but noticeable and adds a wonderful complexity to the beer. In alchemy, Philosopher's Stone is a reference to the substance believed to be able to turn metal into gold. Similarly, we believe we have taken a normal beer style and turned it into something extraordinary.

Bottle. Dark color with a small head. Aroma is sweet, malty, touch of tartness, brett funk and wood. Flavor is similar, very dry and a little sour and sweet.

Tap at the Blind Tiger. 2006. No head. Tart grape, and lots of oak aroma. Lightly buttery, slick, vanilla. Sour cherry flavor that is very lactic. No brett here, just pure oaky sour. This is a far more succesful sour (unintentionally) than their direct attempt called Moaten.

Tap at Blind Tiger. Aroma is of sourness with some slight sweeter fruits. Flavor is sour with candy sugars and some citrus fruits.

This was a funky beer. It was certainly a unique beer but the flavors simply didn’t do a lot for me. It’s just a preference thing. I had thisbeer on tap at Blind Tiger. It poured a deep,dark brown and had a thick consistency nearing the syrup realm. Flavor was sour, or tart, and smacked of cherries and malt. The sourness really took me by surprise. A truly interesting taste. I would like to try this beer again to see how I respond a second time.

Tap at BT. Aroma of grape, plum, raisin bread maltiness. Flavor is increasingly cherry along with the other dark fruits with a honey sweetness and a dry fruit sourness as spices increasingly assert themselves to compete with the almost sugary honey presence. Quite interesting.

On tap at Blind Tiger. Pours a dark brown, almost black, with no head. Aroma of light sourness and sour candies. Flavor is very sour, with barnyard and yogurt notes. This tasted much more like a sour ale than a saison (I guess because of the brett). It was decent and drinkable but not very complex. 7/4/7/4/14 (3.6/5)

Draft at Blind Tiger. Pour is a surprisingly purplish brown with little head to speak of. Initial aroma of diet coke, but as it opens up, more cherry and strawberry comes through. Flavor is similar to the aroma: some tart fruit with a background of diet coke. Fades off the palate quickly. Frankly, this was weird, but I sort of dig it.

Slight brown pour, small head, Fruit, slight funk,sweetness, could have had better flavor, not bad, but just lacking in what was expected,ok
