We’re proud to celebrate our tenth anniversary with the start of a new series of Lambic beers. Project Opus is classically tart, subtly sweet, and occasionally fruity.

Clear reddish brown body with a large creamy tan head. Sweet cherry aroma somewhat woody with some light caramel and sour hints. Sweet cherries, slightly tart with more woody hints. Medium body with fairly high carbonation and a sweet but tart finish.

pours dark brown, slight, lacy tan head. tart sour cherries and malts in the nose. flavor is tart and sour, but there is cherry flavor everywhere, with some woddiness and funkiness thrown in. an example of a lambic that doesn’t suck.

pours a dark brown with red high lights... burgundy sounds good. it’s topped by a light tan head that aggressively forms and quickly disappears. aromas of malt, earth, iron/mineral, light fruity sourness and faint scents of cherries. the palate is lightly soured with nuances of wood, fresh cherries, light malty sweetness, minerals and dried herb-like bitterness. medium body with a soft texture from the carbonation...

Glad to sample this, thanks to maniac. Very dark burgundy brown, nice tan head. Woodsy and sour aroma, faint cherry. Flavor is wood, cherry, a bit of brett, definitely sour. Reminiscent in some ways of a Flemish sour, but there is enough funk there to put it back into the fruit lambic category. Not bad at all, a solid take for an American brewer.

Mahogany black. Tightly packed froth mimics custard in its color and spackle-like consistency. Scents of iron, raisin, musty cellar, perfumey phenols, mulled cherries, straw and a dab of vanilla grace the nose. Hint of band-aid, peach and plaster. Quite minerally. Abundance of soft carbonation. Muted yet well-rounded tartness is quickly countered by scrubbing phenols and a fairly sharp bite of oak. Residual red-licorice sweetness coats the tongue and mirrors the plum-skin acidity, plump raisin and cherry in intensity. While the core is certainly vibrant, succulent and explosive, depth is somewhat lacking as the flavors never fully cling to the tongue. Stellar attenuation allows the nuance and juiciness of the fruit to strut its luster, however, as well as the cleanly-extracted soft and bouncy malts which cushion the minerally backdrop with a straw-tinged sweetness. Irony tang and minerals wipe things clean by the finish and also illuminate the fruit while smooth tannins and musty oak closely lag behind. Bright malt shows great length in the aftertaste. Subtlety and refinement are two tough things to juggle, but they’ve done it well here. Though this might ever so slightly suffer from being too subtle and not quite deep enough. Judging solely from this, there are apparently lots of exciting things to anticipate from this great little brewery. Whooda thunk?

375, corked and baled. Pours hazy brown with a thin off-white head. Tart cherries and funk in the aroma and taste. Sour finish with traces of fading fruit.

375, corked and baled. Grainy-looking dark brown with caramel highlights. Thin gray filmy head. Super sharp vinegar and cherry nose. Medium, fizzy body. Sour and semi-nondescript mid-palate. Gets a little minerally at the end. Hard to believe they got a spontaneous ferment in Chicago and ended with something halfway in the ballpark like they did--very cool experiment with a satisfying result.

375 ml corked and caged bottle. Pours deep dark read with a fizzy tan head. The aroma is of hot yogurt, dust, and tart cherries. The flavor is very lactic. I would like a lot more cherry character here. Medium body. Uber high carbonation. Bone dry finish. I guess its good, but I wish I’d have bought something else.
