Commercial Description:
We’re proud to celebrate our tenth anniversary with the start of a new series of Lambic beers. Project Opus is classically tart, subtly sweet, and occasionally fruity.

Picked up a single 375ml bottle from Murrays liquors in Whitefish Bay, Wisconsin. Pours a hazy dark reddish brown brew with a decent fizzy light beige head that has plenty of carbonation and very little lacing. Aroma of tart cherries, tart dark berries, some Begian yest funk and a touch of caramel malt. Taste is medium bodied, well carbonated with a tart cherry and caramel malt flavor. Finish is slightly tart and dry with a tart cherry and yeast aftertaste.

I picked up a few bottles of this stuff and it appears I’ve waited a bit too long to open it. Pours a brown mahogany color with a tall soft beige head. Aroma is very sour and almost vegetabley and meaty. The fruit is there but very slight now. Sour tannic fruit flavors. Chocolate, sour, tart, and a little vegetabley. Its really past its prime, but sometimes these things happen quickly.

375 ml bottle, via holdenn. Pours a dark garnet body with a one finger fizzy beige head that had decent retention due to the fairly heavy visible carbonation. The nose has a pretty decent amount of funk for a domestic lambic. Nice cherry pie filling with caramel drizzle and just a slight tartness. The cherry flavor is not especially fruity, there’s more of an almond-like cherry pit flavor. More toffee and caramel than should probably be there. A little chocolate and maybe a touch of brett combine on the finish. Mouthfeel is medium bodied with a bit too much fizzy carbonation. A slight clingyness up front fades to a dry slightly dusty finish. Overall, a nice enough beer, but I could go for a little more aggressiveness with the cherry flavor and alot more funk. There’s also a total lack of acidity.

Raspberry sour aroma, fruity. Pours dark red. Good flavor, tart and sweet raspberry, cherries, dark fruit. A slight roasty flavor and notes of popcorn.

2007 Bottle acquired in trade. Pour is a deep garnet red. Head is thin layer of tight bubbles. Aroma is like sour cherries. Pretty fruity but definitely tart. Flavor is sour and tart with a straight cherry finish. It started great but I’m quickly getting bored with it.

Pours a very dark brown with just the slightest red hint to it. Head is full of carbonated bubbles gathering at the top. Smell is tart cherries. Taste is tart cherries and a little funk. Most impressive is the creamy fullness in the mouthfeel. This has a truly luxurious mouthfeel. A decent beer that given the chance would probably drink again.

What’s with the mickey mouse on the bottle?

Bottle from BBB63. As an extra, no less. Hard to call this a lambic, but it has a decent sourness to it and cherries are very noticable. The pour is very dark, and has a flavor profile much more like an oud bruin than a lambic. Dark, pungent, plumy notes, a dry, bready tartness, molasses and prunes. There is a bit of a mineral bite in the flavor of this that holds it back. Over-oaked, as well, a bit buttery. If they soured this up more and had it less time in oak it could be very nice. As it stands, I guess it is the best American "lambic" I’ve had, but it really isn’t a lambic at all.

Pours very dark brown with a deep reddish hue and a large frothy tan head. The aroma is darker maltier aroma than most lambics. It also has dry sour cherry, paper and soda effervescence. Medium / light body with lots of papery aspects and odd carbonation. The flavor is far from authentic tasting. The taste is much like the aroma with a finish that is even more papery. This doesn’t have the sharpness, overt tartness and blatant wild yeast that I love in lambics. This is an okay beer, but far from a great lambic.
