We’re proud to celebrate our tenth anniversary with the start of a new series of Lambic beers. Project Opus is classically tart, subtly sweet, and occasionally fruity.

Found a random bottle at a Binny’s. Dated 2007, I guess this is atleast two years old. Very dark, plum red pour with off white bubbly head. It’s got a wild yeasty nose, some nice sourness. Slightly tart flavor with wood, cherries, a dusty earthiness. Some yeast. It’s not really sour, but it’s not that bad. Lots of carbonation, chalky palate. This is like going in expecting the worst and then being embarrassed for overreacting.

12.7 oz bottle, corked & caged - 2007 version, fresh: extremely dark brown with cherry hues...ivory, small bubbled head. Sour cherry skin aroma, with darkly toasted, leathery components...also has notes of dark yeast and rye bread. Palate is smooth with subtle carbonation down the middle of the tongue. Rich cherries and dark ale flavours mix with a hint of spicy dough and orange peel. Finish is light, oaky and has touches of burnt cherries now...I really dig the attempt here, not totally authentic (but how could it be?) but has quite a few whisps and reminders and really points to a traditional lambic, even if it doesn’t really get all the way there.

Brown with some reddish hues and a foamy beige head that leaves layers of foam on the glass. Chunks of suspended yeast hand out throughout the liquid. Aroma of oak, cherry, wild yeast, mild funk and spicy pepper. Taste of wood, mild cherry, spicy yeast and mild funk. Somewhat carbonated and tart with a mild oak and funk aftertaste mixed in with spicy pepper. Decent sour/lambic/whatever it is.

Bottle at the Where the Wild Beers are event. Pours a hazy brown with little floaties and a thin white head. Smoke, caramel, roast. Tastes malty, light sour and vinegar, and Styrofoam. Dry finish, with some nice tang.

Bottle shared at Where the Wild Beers Are NYC 2009: Rusty brown with a ruby hue and a thick khaki head. The aroma has a touch of roast with a syrupy cherry note, mild oak, marzipan and almost a peat suggestion. Interesting. Fluffy body with an interesting flavor as well. Tart upfront with an underlying mildly roasted, nearly smoky/peat-like malt note under the cherry tartness and brett chalky phenolic dryness. A bit hard to figure out, but it’s unique and tasty. Like a peated sour ale. Nice.

Hazy red brown color with a small, off white head that left light lacing on the glass. Aroma of brett, wild yeast, funk, leather, cherries, grapes, and vanilla oak. Taste of cherries, toasty yeast, light wine notes, and a sour finish.

Pours a murky brown with a smaller bubbly off white head. Aroma of perfume, tart cherries and slightly medicinal. Flavor of sour and tart cherries, very dry, not overly sour but sure bites.

Bottle 2007 vintage Pours out a rootbeer brown topped with a sand head. Aroma of sour cherries and a little wood. Tast was more of the sour/tart cherries and a nice oak. A little malt on it aswell. Thanks Toby
