The aroma is subtle with grainy wood and some light soybeans. There are also fall leaves in here. The taste is light with bread crust and a hint of grapefruit. Aroma is sharp and hard to describe. I put it at a blend of apple peel and sour citrus juices. Tea colored with a pinky thick head. Very little flavor. Not quite sweet, but approaching it..again more apple peel notes. Never really malty either, but approaching it. It’s a hard beer to describe, but flavorwise it doesn’t get me very excited. Headless Man may be its name, but it certainly isn’t a headless beer. It pours a lovely, creamy, off-white head that rises to half an inch during the pour and gradually settles back to a filmy layer. The body is a bright amber color and is hazy enough that I can’t see through the beer. The aroma is a bit odd, with a general "unidentifiable" aroma for me. It’s modestly toasty and malty, I suppose, but I’d say it’s nutty more than anything, although I’m also vaguely reminded of plastic. It’s just a weird aroma, and just not all that appealing. The flavor is very toasty though, and there is no vagueness about that. It’s sweet, nutty, and malty, with just enough mild bitterness to keep the palate refreshed. Body is medium, and carbonation levels seem perfect to me. And the beer has been able to retain that filmy layer of head atop the beer for the entire session. Whether the Turtle’s spirit helped guide the Headless man happily into the afterlife, one can only hope, but the Turtle’s spirit surely has guided me to this very tasty and enjoyable brew. This pours to a golden/copper colored body with a white head and good lacing. The aroma is flowery and almost smells like cologne. The flavor has a bunch of perfume hops, light citrus, deep toasted caramel. The palate is a little light and doesn’t excite or fail. Lots of carbonation. Medium brownish amber with a small, thin head. Aroma is a bit of sweet malt and spicey, flowery hops. Flavor is more of the same with the hops coming through a bit more. The aroma is a nice sweet caramel malt but it has some slight odd smell. I don’t know what it is ecactly. Regardless, the flavor comes through in a good solid malty fashion. It doesn’t carry a real strong bitterness, so it goes down and leaves a nice leafy malt taste. Oh yeah, and thanks again to my Secret Santa.
