Commercial Description:
The Headless Man is brewed in the "old way" of a Düsseldorf-style Altbier. A unique cold lagering process gives this amber ale its smooth taste.

Miller Park - Brewers-Twins game - 12 oz bottle. Pours a decent medium amber with a solid creamy, off-white head. Slight toffee aroma. Flavor has some toffee notes with a touch of butter and some caramel in the background. Nutty background. Clean, smooth mouthfeel. Overall, decent.

Toffee and caramel aroma, nice with a slight hint of hops. Copper-orange in color with a white head. Nutty caramel flavor with a slight hint of toffee. No hop character in the flavor. A little sweet on the palate, but not in a bad way at all.

Tap at the American Club. Light reddish-amber color. More hops then I was expecting which took me by a suprise. Hints of roasted grain and a sweet malt backbone. Quite the tasty beverage.

The flavor is an ok, simplistic mix of hops and caramel malt. Nice amber color. Body is full of tiny carbonation but in the end is quite thin and watery, with a slightly cloying sweet finish. Malty aroma also is weak, but ok. The label looks like it reads "Amber Ale" unless you look close -- and this may be a closer description in that despite its shortcomings, Headless Man is actually better than most Altbiers I’ve tried ( I’m generally not a fan of that style and would not have bought it if under the impression it was _alt_ instead of ale). Bottom line is this might be a good session beer if engaging in non-serious "Is it okay if I have to pee" activity such as a bar trivia contest.

Sweet-malty aroma. Good bready flavor but a little weak on it. This beer smells really good but lacks a little in flavor. Aftertaste of the malts and biterness is good. Overall flavor is good but lacking in quanity and the mouth feel is watery.

Crystal clear amber with a thin, off white head. Very sweet, toasted cracker, fruit, and malt aroma. Flavors of biscuit, malt and caramel. A little bit watery. Very clean and slightly bitter. Not like any Alt I’ve had but not bad either. I would compare it to Fat Tire.

On tap at Tyranena, March 2005 and June 2006.
Translucent copper-orange in color with a perfectly creamy, orange-tinted head. Toffee, caramel and chocolatey burlap sacks weave their way through the nose, followed by malted grain and mild cigar wrappers. Moderate cocoa powder dust settles in to elicit a flavor akin to toffee bark. Grainy sentiments and an engrained prairie intuition. Chocolate elements with stork chocolate reisin parallels. Caramel cubes pulled off of cottonwood prior to consumption. At times we’re munching on Munich and caramel grains, and there’s nothing wrong with that. Soft carbonation supports the melting caramel toffee cube sweetness, and it’s quite balanced in the altbier tradition (though an alter ego, hopped-up sticke alt would be a fun experiment for the Brewers Gone Wild! series.) Caramel, sweetened bran and tame toffee flavored grahams gently fade away at the outset.

Had this one bottled. Deep, amber color, cloudy, with thin head. Nice hoppy taste, smooth with a slightly sour aftertaste.
