Honey and malty tones dominate. Spicy complex flavors that taste very different depending on what you are eating with it. Really went well with a bleu cheese salad. Aroma is very strong; lots of spice, pine, mint, plum, pear, and some giner. A hint medicinal. Tastes a bit more medicinal with a rough fruitiness. More mint and pear, the ginger plays a stronger role now. A summary would be a hint of vinegar mixed with fruit juice and a sprig of ginger. Still a fun brew, thanks Jeremy for sharing. Pours with a large, thick off-white head covering a hazy golden body with some slight particles towards the end. Lots of lacing and very good retention. Aroma of candi sugar, spices, appricot, cinnamon, clove, pears, honey. Tast is strong yeast some honey a bit of fruits and herbs. Slightly dry with light carbonation. Some light oxidation. I can’t really put my finger on exactly what it is but it gives this beer a very unique quality. lively palate. alcohol warming. this beer aged very nicely. very enjoyable.
