5/12/2007: Unibroue Trois Pistoles has to be one of my favorite (and one of the best) Unibroue brews... Dark brown/amber in color with an lasting, foamy, beige-colored head. The flavor and aroma contain dark fruits, sweet caramel malts, and some interlaced spiciness (clove?). This beer also tastes strong, but the alcohol is not outwardly distinguishable in the overall flavored. This beer is very well-balanced overall and has a smooth, medium palate with a generous level of carbonation without being going over the line. Trois Pistoles is a very tasty beer that is quite versatile and a must-try for all beer aficionados!

Tart fruity aroma with raisins, plum, cocoa, vanilla, clove, pepper and coriander. Sweetish, vinous, raisiny, nutty and bready flavor with notes of vanilla, plum and cocoa. Warming palate. This beer has the typical corked belgian beer aromas, but the taste is more mellow, watery, and drier than I expected. The flavors become most apparant with a dry kick in the finish. Dark violet color, with a short tan head that recedes too soon. Rich, heady aromas come wafting out the bottleneck, plump with associations: Raisins, plums, spices, brandy, dark rum, smoke,, and so much more. Bracing onslaught of hops on the palate, but excellent buttress of malt backs it up.
Fantastic spark on the tongue, and a wonderful sweetness that follows after the drizzling of hops. Transendant complexity, utterly other-worldly, and overjoyous.
A real treat of a beer, and a rare delight. Only the finest of human beings should put this to their lips, as a benedicton and reflection of the worthiness of their souls. So, all you slobs, go better yourselves before daring to crack the cage and cork. So go do community service, adopt a stray kitten, give a street urchin a quarter, let someone on the freeway before you, be kind to our fine feathered friends, turn a Bud man on to oatmeal stouts, just do something to realign your karma to make you worthy enough to pour this fine beer down your gullet.

The head was mostly lasting but left very little lacing. Mainly a malty aroma to me, dry chocolate and then some dried fruit. Amazing stuff, I truly hope that Sleeman’s recognizes the value of the micro-geek market and keeps this baby around. Dark brown appearance, fizzier than I was expecting. Marvelous aroma of peaches and apricots that reminds me of a massage oil that used to be produced by Crabtree & Evelyn. No comment as to the use of the massage oil. Flavor is slightly of alcohol, but is dominated by a lush malt complemented by a myriad of fruit flavors. A beautiful beer. Incidentally, nice to have the Spaniard rate this right before me. This beer is extremely carbonated (maybe its more carbonated in the 12 oz bottles?) Aroma is very intriguing with a fruity bouquet. The start isnt doesnt equal the aroma, it is much more mellow. The finish is good for a 9% beer. I do notice the ethanol aftertaste more with Trois Pistoles than La Fin du Monde, though. Still a very enjoyable beer(9/5/8/4/17 4.3).------- bottle purchased at BevMo in Natomas. Fruity, vinous, raisin, dried plums, brown sugar, and molasses are all present in the nose. Some candy sugar sweetness also is there. Aromatic, delightful. Moderately hazy light mahogany/dark amber body with a faster dissipating head than expected. Head is light tan. Spritzy, vinous, fruity, plummy, followed by some yeasty esters and some roasted maltiness. The flavor is nice, but this is not as nearly as rich or flavorful as I initially thought. Aromas of Christmas -- not the spicey, mulled Christmas, but the Christmas morning in the kitchen smells like brown sugar, fruit cake, deep vinous notes. Lovely. Flavors remind of a dubbel that has been reduced over a stove...deep and malty, it’s too complex for my amature palate to understand. Has some recognizable Unibroue characteristics. Dark fruits all over the place, each in its place as the balance of this brew is sublime. Nice dry finish.
