Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Thanks to HannonT for sharing this one. Purple hue to the body with a thin white head. Tart funky nose, fresh berry, softly acidic with a bit of woodiness to it. Very dry with a medium sour finish.

<b>Bottle:</b> Murky purple-pink pour with a fizzy white head. Subtle brett nose with notes of hay, light citrus zest, cheese, blackberry and loads of lactic attributes...dry, tart body...flavor is mildly sour with some mixed berries and a conglomeration of various farmhouse notes which are subtle. Great brew!

FoBAB 08. Bottle. Pours orange with a nice head. Aroma of blackberry, oak, and the usual sour funk. It finished dry, and wasn’t as sour as I was hoping for, but still a solid brew.

FoBAB 2008 offering: #B815 - Surprised that Upland shipped some bottles of this bad boy up. Poured an orangish brown pour with a moderate white head. Aromas are oaky, sour, and blackberry sweetness and sourness. Taste is similar: oaky, sour, dry pervades with more blackberry evident as you work into the body and finish of the brew. Sweeter without as much tartness or oak as hoped for. Good.

I enjoyed this beer a lot. Deep orange-purple with a foamy, silky head that lasts as long as you are drinking the beer. Blackberry taste is strong, but not overpowering. Tartness is offset by the smooth oak aging. Not as funky as a traditional lambic, but that isn’t really the point.

Fobab VI. Oddly purplish fuschia and a touch brown. Nose is Blackberry, minimal funk. Reminds me of a Lindeman’s, but slightly better. More acid and wood than the aforementioned, but still a touch too sweet for me. Nice, but nothing great.

FoBAB 2008, Chicago: This poured a murky pink body with an odd shade of pink for its foamy head. The aroma has a tart funkiness to it, wet hay, and just a sligt whiff of the berries. The fruit comes forward a bit more in the flavor but is pushed back by the acidic sourness and a suggestion of oak, all in all balancing out the flavor quite nicely. Sourly refreshing.

750 ml bottle given to me by tjthresh. Pour is ruby red, with an off-white one inch with pinkish tint to it. Aroma of tart, sour, very fresh blackberries. A nice mineral, earthy element to it. After it sits a bit, the oakiness and wood are revealed. Lovely nose. Taste is a perfect mirror of the nose, featuring fresh sour, tart blackberry fruit along with a backbone of mineral earthiness. The flavor also has the oak wood from the nose. Please floral aftertaste. Palate is medium, and drying. This was a treat, thanks Tom!
