Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

750mL bottle of deliciousness from StFun. Thanks Josh! Opened at Lost Abbey sinner’s art. Reddish amber color. Mild sour flavor. Great aroma of mild sourness and mild raspberries. Insanely easy to drink. Wonderful.

Thanks to wetherel for sharing at the Lost Abbey Sinners party. Very tart and bitter blackberrys. Sour with lots of funk. Good stuff!

Bottle via wetherel at the lost abbey sinner’s and saint’s party. Pours reddish with a tan ring. Nose is great, big tart blackberry and lots of funk. Taste is tart with blackberry notes and overall very nice.

Second (2008) batch. Pours a lightly hazy warm purple red with an ephemeral offwhite head, thinning to a film of fine bubbles. The nose is dry and fruity. Blackberry acidity to even slight lactic tartness pops out, but there’s also a good bit of the salty to slightly yogurty lambic sort of nose. No real biting tartness like I remember from last year’s raspberry lambic. A light creamy to slightly slippery mouthfeel with even small bubbles. A bit fuller than the style often has, but that’s probably a good thing. The flavor is really pretty delightful though the tartness isn’t particularly biting. Big blackberry over a salty yogurt sort of lactic flavor. A slow subdued graceful lingering tartness that pops in and pops out as the creaminess fades. Also a good deal of lingering wheat character here. After taste is a bit acidic, very much a lambic, even if not mouthpuckering. Very enjoyable beer! Much more subtle in sweetness than the relatively "cheap" fruit soda tasting Belgian lambics.

Bottle @ the 10.01.2008 release party with goryshkewych’s. Murky purple with a frothy tan head. Well oaked aroma with blackberry pulp and tart lemony funk. Medium body and nicely carbonated - unlike the blueberry which seemed a bit flat... has a mild to medium sourness front to back. Great flavors of sweet tart blackberries with citrusy lemon and earthy wet wood. The strong authentic fruit flavor, with a sourness that doe not get in its way made for a very drinkable, if young Lambic style brew here. Like to try a bottle of this four or five years down the road.

Batch 2 - 750ml bottle. Poured a hazy purple amber in color with a white head that diminished quickly. Nose is tart with notes of blackberries and brett funk. Tastes is a little sweet. The batch 1 lambics had some time to age and they got more tart and funky with time. This batch was young, but still it was really quite great. Blackberry notes are present, but the american lambic backbone is probably on the best around. Very nice.

Wow. Probably the best American representation of a true Belgian Lambic that I have had. Pours a hazy reddish amber. Sour funk dominates the nose. Hints of Blackberry fruit, but the Brett funk dominates. I love this beer, and can’t wait to try some of their other lambics.

Bottle shared with BBB63 at the pub. Pours a muted red with just a touch of white head. You could really smell the tart and tang that are about to experience. No real fruit character in the nose, but I picked up a bit of barrel, and the sour funk is strong. I really liked it. Incredible flavor. Tart and tangy, just as I suspected. Fruity, but not a fruit flavor that would make me think blackberry. Medium body with high carbonation and a very dry finish. I went into this not expecting much and after trying fun one variety, I’m totally blown away. Only 6 more to go.
