Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Courtesy hopscotch. Pours a dark red color with some pink tint topped by a small off white head that settle quickly. The aroma is very citric with hints of tart blackberries and some barnyard funk. The flavor follows suit with tart blackberries and cherries followed by some funk and acidic flavors. There is some lactic cream that comes through and smooths out the sour flavors. Medium bodied with good carbonation and tart, dry finish. Really nice lambic with good flavor. This one surprised me.

Bottle at Chris-Os Pre GBBF 09 tasting ... amber ... sweet yeasty barnyard nose ... again barnyard ... sour and funky.

Bottled, thanks xmarcnolanx! Cloudy reddish amber, siry head. Heavily citric aroma where the blackberries lay in the background. Freshly citric with some sweet buttery malt. Lightly spritzy with marked acidity. Does not really achieve the complexity of the originals, but on it’s own it’s a darn fine beer!

Thanks to omhper for charing the bottle. Big fluffy head that lingers. A fine lambic aroma but only traces of blackberries. The taste is semi sweet with a good acidity but the blackberries hardly noticable in the taste.

Thanks to Hopscotch for the sample. Cloudy brownish red. Tart and funky blackberry aroma. Light tart tasty fruity flavor. Very good.

Thanks to hopscotch. Pours a cloudy pink color. Nice tart aroma of fruits and funk. Flavor is sour and acidicnwith a good amount of lacto and good carbonation. Very good.

Bottle at the legend of chriso’s pre GBBF09 tasting. Alround rating: Some blackcurrent fruityness, gariny pale malt, brett is key again. Seems to me more like an infected golden ale than a lambic.

Blind tasting at Papsø’s
Muddy reddish orange color, no head. Sour aroma, some cherry too. Good body, it has an aggressive sour flavor, with sour raspberries, very lactic. Maybe a bit too much yeast at the end. Good lambic.
