Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottled. Amber colour, medium beige head. Aroma is blackberry, some wood, quite tart, but not the dry tartness. Flavour is quite burning tart blackberry, wooden, and some rather yeasty notes. A bit sweetish tart. Really pleasant.

@dmacs UFC100 Gathering courtesy of MrBendo thanks Todd-750ml bottle–pours an off white ring for a head and hazy orange/red color. Aroma is vinegar, tart fruit. Taste is vinegar, tart fruit, light malt, yeast.

Bottle shared at the UFC 100 gathering provided by Mr. Bendo. Poured a hazy reddish amber with a smaller soapy white head. Funky berry aroma with lots of sourness. Flavor is very sour and funky with lots of blackberry. Really nice.

Bottle 75cl. @ Papsoes blindtasting. [ Bottle #19. ]
Unclear hazy medium red orange color with a small to average, frothy, fair lacing, mostly diminishing, off-white to white head. Aroma is berry, apricot - peach, dark berrys, brett, oak. Flavor is moderate to heavy sweet and moderate berry acidic with a average to long duration. Body is medium to light, texture is watery to oily, carbonation is flat. [20090612]

Appearance: Pours out a slightly hazed, amber-purple body with a small-sized, bubbly, white head. Smell: Aroma of sourish, tart blackberries sprinkled with table sugar, woody, spicy oak barrels, and a few small wafts of pungent lactic acid. Taste: Hasty taste of sweet sugars yield to tart, lightly fruity blackberries and lesser hints of damp hay and mustiness. Fairly restrained lactic sourness throughout. A touch of mustiness at this point, but it’s certainly no filthy, dilapidated barnyard. Easygoing, smooth oak barrel character with a touch of vanilla butter. Final taste of lightly tart berries on the smooth, damned near creamy, but still dry finish. Mouthfeel: Medium-bodied. Medium-plus carbonation. Surprisingly creamy mouthfeel. Drinkability: Okay, okay, so maybe it’s not the most authentic, true-to-style fruit lambic out there, but, come on, it’s very tasty, very drinkable, and really, who wouldn’t take this over a Chapeau lambic any day of the week?

Bottled. A murky orange-brown beer with a thin beige head. The aroma is sweet with strong notes of fruit, as well as medium notes of malt, as well as light acidic notes of berries. The flavor is sweet with notes of malt, berries, and acetone, leading to a tart finish. Thanks KimJohansen for sharing.

#19 - Amerikaner Blind-Smagning 12-Jun-2009 hos Papsoe. Bottle. Cloudy reddish - white edges. High berries, fruity, sourish, acid, high sourness, wood, acetone, oak, high sharpness, leather, light rubber, lacto. Nice.

Colour... amber/orange. Nose... highly acetic with some berry. Palate... A quick burst of carbonation followed by a shot of blackberry and then vinegar with a tart medium length finish.
