Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Hazy orange with a tiny off white head. Sour aroma with lacto, peach, sour berries and woody notes. Flavour was sour with sour berries, leather, wood and lacto. Finished sour.

From bottle, blind #19. Pours murky dark orange with a fully gone head. Aroma is mild brett, acidic and orange fruity. Mild acidic, fruity and dry. Vague acetone base flavoured. Smooth acidic and fruity finish. Nice and mellow.

Bottle 75 cl. Courtesy of KimJohansen. Pours a cloudy and opaque red with a small off-white head. Tart and fruity nose. Medium body, a little low in carbonation, indefinable berry accents with a fairly tart finish and some acetone. 120609

Bottle #19 at Papsø’s blindtasting. Hazy orange coloured with a small white head. Fruity and light acidic aroma of berries and brett with notes of oak., Light acidic flavour of fruits and berries with notes of brett and oak. Tart finish.

Rusty apricot. Big-bubbled off-white head. Subtle nose of plasticlike phenols, apple jelly, iron, and medicine. Soft and prickly on the tongue. Sharp iron-tinged acid generates a bit of tingle before giving way to an array of dried strawberry, blueberry, and raspberry suggestions. Overly tart/unripe fruit character. Slick and unpleasantly tacky, as well. Oak fails to accent the beer in any way, particularly in the way of structure. Iron lightly scratches the palate while curiously-muted malt contributes little more than a stale wafery quality. Finishes slippery with gradually diminishing fruit, with a smidge of peach-fuzz bitterness. While I wholeheartedly applaud the ambitious concept and effort in creating this beer, it’s just too generic to excite me. Pretty hollow and somewhat flawed (plastic). Aroma does have a nice “seedy” character about it, though.

Nose is tart and lightly sour. Stick your face in the glass and enjoy. Grapefruit color with a champagne head that drops to lace and ring. Super hazy in the glass. Uber tart. Big flash. Deeper roundness comes through. Liked it.

Bottle at Toncatchers. Light brown pour with almost no head. The nose was funky with various sour fruits and some brett. The taste was overtly sour with complex berries and some wood. The finish was long and sour. The palate was full and smooth. Overall: A very good sour lambic. Recommended.

bottle at Fort Wayne tasting - Pours pinkish amber with a thin head. It smells of tart berries and some lambic funk. The flavor is big on the blackberries with some sweetness that’s well complimented by tart berries and the funky wild yeast. It all blends together very well and the spritzy carbonation makes for a pleasant mouthfeel. I didn’t get the big deal about the Upland lambics when I had my first one, the peach, as I was unimpressed. Now I get it. Excellent beer. I hope more of them are like this one.
