Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

courtesy tpd975. pours copper, thin white head. Aroma is yeasty and of berry. Taste, similar, blackberry, not overly bitter as anticipated, yeasty with some lingering tart fruitiness. Good stuff.

another upland shared by psprings...

pours like pinkish clamato juice only thinned down and cloudy??? it is topped by a small fizzy white head. any berry will do aroma and flavor along with pale malt, minerals, savory wood and a touch of grassiness. it is the most tart of the bunch but it is so similar in every other way i would be hard pressed to tell them apart... blackberry is faint and only present if you dig for it.the finish is quite tart and gives it a refreshing mouth feel. 7/5/7/3/15/3.7

Sampled at hellbilly’s hellraiser 3 gathering. Bottle courtesy of psprings. Pours a hazy pink color with a small fizzy head. Aroma and flavor of berries and light funk and sourness. Good stuff. Thanks Paul!

2007 Bottle. Clear raspberry colored body below a short, fizzy, off-white head, mostly diminishing. Great aroma of blackberry and funk of brett, wet blanket and barnyard. Hint of lemon. The flavor is lightly bitter, lightly sweet and moderatley acidic. It finishes heavily acidic with a comfortable tartness. Tastes of mold and blackberry. Light to medium body, watery texture and lively carbonation. Very comfortable. Brett yeast dominates this from beginning to end. Solid, complex and enjoyable.

Thanks to theisti for this beer. Pours like pink fruit juice, a bit cloudy. Nose of funky blackberries. Flavor is rich blackberries with smooth carbonation. Not to tart with a clean finish.

[Phish parking lot, 3-6-09] Poured a cloudy red purple color with a small, purple head that left light lacing on the glass. Aroma of blackberries, oak, vanilla, leather, and wild yeast. Taste of blackberries, some citrus, wood, and sour finish.

The best of the Upland Lambics so far. Pours a blackish-blue with no real head and minimal lacing. Aroma is deep and complex, full of juicy fruits and sweet tarts. Flavor is nice, but more fruit than tart. Nice balance of sweet fruit and sour funk. Oak, cheesecloth, touches of vanilla and juice. Very, very nice. Finishes just a tad sticky.
