Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottle shared by ygtbsm94, thank you brad. Pours a hazy red body with a thin pinkish head. Berries blackberry hint of blueberry, nice vanilla and dry woodiness. Tart and mildly acidic. Very enjoyable, maybe my favorite so far from upland.

Bottle shared via psprings @ Hellbilly’s Hellraiser 3.0...THANKS AGAIN PAUL!!! If you lined all of the Upland Lambics next to one another, I think I would have a hard time distinguishing which was which!!! Cloudy mandarin pour with a non-existent head. Sour berry skin (any berry will do), orange zest, lemon/lime juice, and citric acid. Not a ton of carbonation, but again, it doesn’t take away from drinkability. Good...not great.

Bottle shared by psprings at hellbilly’s hellraiser 3.0 tasting. Pours a cloudy dark cherry color with minimal head. The nose is sour blackberries and malt. The taste is light red wine vinegar, sour blackberry and malt with a acidic dry finish. Medium bodied. Refreshing brew – thanks Paul!

Bottle pours cloudy orange red color with white head. Aroma is fruity, tart, acid, and some funk. Mouthfeel is medium. Flavor follows the nose and is tart, acidic, dry, with a nice balance between the sourness and sweetness. Overall a damn fine brew with a nice amount of carbonation.

750 ml bottle
Shared with a few people at miketd’s tasting this is one I could have finished myself. Somewhere between sweet (Belgian Red) and tart (Cantillon) it strikes a nice balance that does not require a roll of Tums at the end of the night. Hopefully the rest of the line up lives up to the expectations of the first two I have tried this year.

Aroma / Appearance - The light pink body contrasted against the bluish/brown body. Giving off the smell of blackberry jam spread across rye toast it gives a nice invitation to the senses.

Flavor / Palate - Tart, dry, and fluid it washes cleanly across the palate. Very drinkable for the style this falls about halfway between the sugary sweetness of Lindemans and the intensity of Cantilllon. It would not be a stretch to finish a bottle of this alone over a few hours.
