Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blueberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottle sample at Keg Fest from brewmaster. Poured hazy blue amber color with moderate fizzy white head that diminished slowly with fair lacing. Good tart blueberry & woody aroma. Medium body with smooth texture. Moderate sweet & sour flavor with a solid tart fruit and small alcohol bite finish of moderate duration.

Bottle. Yet another share thanks to Eyedrinkale. Pours an amber color with red/purple berry hues. Aroma is tart, funky, blueberries. Taste is woody sour with little sweetness to be harvested out of this bottle.

Bottle, shared generously by eyedrinkale. Reddish amber pour. Aroma is dry berries, slightly tart, and woody. The flavor is more tart than the aroma, same fruit and berries. Good flavor in this one.

Bottle at Paul’s Hoboken Gathering: Muddy purple with an off white film for head. Great aroma. Funky fruitiness with subtle blueberry skin, aged brie cheese, and lemon-rind. Nice smooth acidity in the body. Funky, complex with a very subtle blueberry note in the background behind the overall tart body. Very nice, and subtle Fruit Lambic.

20071216 750ml bottle shared by Bendo at Madness with the Moose. Pale magenta color is pretty, head is fleeting. Aromas of blueberry, for sure, simple funky barrel, twiggy. Somewhat heavy on the palate suggests some age would do this well. Only mild sourness. Would like to see this take a step beyond the currently almost dessert-beer impression. Keep it up, Upland. I like where this brewery is headed.

Thanks to secretstash for a sample. Pours amber red with fizzy white head. Aromas of oak, berries, and malt. Flavor is super sour with berries throughout with a not so dry finish. Not my style at all, but a very interesting brew.

Poured red with a small fizzy off white head. Aroma of sour fruit. Lots of sour in this guy. No signs of blueberry flavors at all. Straight up sour.

750ml bottle. 2007. Sourness dominates both aroma and flavor of this lambic. Blueberry is a minor player, but still there. Red/purple body, very little head. The aroma is vingary sour and funky with notes of earthy mustiness. Slight hint of blueberry. The flavor is tart/sour, highly acidic with some blueberry flavoring. Lightly to moderately sweet at the beginning. Dry finish and long dry aftertaste.
