Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blueberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

750ml bottle. 2007. Sourness dominates both aroma and flavor of this lambic. Blueberry is a minor player, but still there. Red/purple body, very little head. The aroma is vingary sour and funky with notes of earthy mustiness. Slight hint of blueberry. The flavor is tart/sour, highly acidic with some blueberry flavoring. Lightly to moderately sweet at the beginning. Dry finish and long dry aftertaste.

Thanks to Jeff. Purple/mahogany, thin head of purpleish pink. Nose is general berry (more raspberry than blueberry.) Its both sweet & tart - the fruit is very well balanced by a nice lemon juciy acidity.

From a 750mL Bottle. Hazy, ruddy purple colored pour with a thin head of wispy off-white. Gentle blueberry aromas emerge from behind a curtain of musty brett and spicy black pepper. There’s an earthy quality to the nose, bringing out suggestions of tree bark and soil, combining with the blueberry character to create a blueberry bush sensation. Light bodied, crisply carbonated mouthfeel with a moderate acidity. Blueberry flavors are restrained, and come out from behind a lightly tart, somewhat thin body with some peppery phenols. Bright lactic acidity up front, but it doesn’t have a complex lingering quality, and the flavors grow thin somewhat quickly. Certainly no Cantillon, but an enjoyable, respectable effort.

Bach Home Again Tasting - 750ml bottle - 2007 version: Hazy blue pour with a thin white head. Odd nose of tart blueberries and funky yeast. I guess horse blanket would be appropriate here, but a well kept pony blanket might be a better descriptor. Funky, but not over the top with a nice vinegar back. The body starts pop tart like, with a dose of sugary fruit and a lot of sour. The sour dominates the sweetness as it leads into a dry, chalky finish.

750 ml bottle shared by wetherel. Blueberry aromas were slight on the aromas. Tart and acidic. Burgundy color with not much head. Flavors were a bit better blueberry-wise, but still a bit under represented. Flavor was overall tart and fruity though. Not bad.

Sample tasted at "Spring in the new year with brett" at fordests house. Of the two Upland’s this one left a little to be desired. The blueberry just wasn’t working for me. But still a decent lambic.

Tasting, courtesy of Fordest’s event. Beer #4. Pours a sort of purple-red color with a small white head that quickly disappears to a fine ring. The aroma was somewhat unusual with bret and a sour fruitiness, but I could not really pick out the blueberries in the nose. The flavor was also sour-fruity, but once again blueberries not clearly one of those fruits present. Mouthfeel was just a bit thin. The finish was long and sour. Overall: If this beer had not been tasted side by side with Cantillion Blaber and Upland Strawberry lambic I might have liked it better.

Thanks to yjb for supplying me with this bottle. Pours deep red with some fizzy white bubbles. Smells of funk, blueberries, brett, oak, dust, some residual sugary hints. Tastes tarte with a load of complimentary blueberries, some sweet touches, an underlying intense dry sourness and hints of oak. This is an amazing beer and I can’t wait to sample the strawberry and blackberry versions.
