The aroma is pretty nice- the funk is developed with some tartness, aceto, brettanomyces, leather and only a very subdued damp oak note. The peach is in the background playing only a small role. The body is not carbonated enough yet, and the flavor does not have enough funk-a touch of sharp wild fermentation. Pours a mostly clear in the first pours- mine turned out a slight haze- and Andys last pour looked like puke. haha. No head due to a very slight carbonation that I think will build with time in aging. I got a lot of really fresh peach aroma, peach puree, chutney, and even some fresh crazy peach mango salsa stuff my mom buys, with a nice acidity in the nose. Ok fresh peach flavor, a bit sweet still, body is also big and not ready yet, some doughy yeastiness, almost a bit gritty, with some ok good acidity but still on the slight side. Nice aroma, a clean tart, maple syrup and fruit and peach. Good tartness. The flavor is quite disappointing after the aroma, almost no sour, and a very thin body. Almost no carbonation. If you take huge sips you get some buttery funk, perhaps, but thats about it. A touch of peach in the flavor. This one is disappointing. Careful pour yields mostly clear kool-aid orange colored body with a small white head that dies quickly. First smell and first taste remind me of real fruit peach yogurt - mostly sweet, but natural, peaches, along with a creamed lactic note. Mildly prickly up front, peppery, but not at all that tart or sour. Filmy and flimsy texture, oily at times. Low carbonation, a little more substance than is usual for the style. Very subtle peachy, less subtle, though still very subdued lambic tartness. A bit herbal, of all things. Small alcohol. Lingering wheat. Really full, almost creamy for the style. I know this isn’t a traditional lambic in any way, it is still delightful and interesting. Murky pour with bizarre pastel color. Though the other didn’t like it (or the other upland lambics) very much, I though this was highly drinkable and very comfortably palatable, even for people new to lambics. Very very light funk. Flavor is sour but finishes watery with no real peach flavor to speak of. Why this is highly rated I have no clue. It has potential but Upland needs to go back to the drawing board and start this over. The worst of the 3 Upland lambics I had.
