Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole raspberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottle at Rich O’s: poured pinkish with a tiny bit of head. Very light aroma of funk and a slight bit of floral raspberries. Flavor was sour, like the Peach lambic, but again, where is the fruit? Just a slight hint of raspberry and what turned out to be a very watery finish. Thanks to Roger for breaking these out. I think I would have hated to pay for this.

Bottle, at WeeHeavySD’s Halloween tasting, with thanks to WeeHeavySD. Clear pinkish-orange with a white ring. Big sour and sweet aroma, of raspberries, citrus, and yeast, with a hint of sugary baked goods. Taste is tart and clean, then picks up more sourness as it goes, with raspberries, sugar, and a bit of citrus. Lingering sweet and sour berry flavors. Very tasty and drinkable.

Bottle opened by my friend Jon. Cloudy red amber color. Mild tartness. Very easy to drink. Leans dry in a great way. I love it. Better than Peach, but not as good as Cherry IMHO.

Thanks to TearsforBeers. Batch 2. Damn cork wont come out, well that explains it, not much carbonation. Pours a thick glowing orange color, with some clarity. Looks beautiful despite the lack of head and just a bit of a bubbly head. Aroma is thick, light marmalade jam with some peach skins and lots of funk. Lots of funk and fruit but not berries, especially not raspberries. Taste is lightly acidic with a bit of mouth-puckering action. A very horse blanket finish and a bit of sweet tropical fruit. It has an under-carbonated body but it works well here with the medium thick body, which combined feels like an unblended fruit lambic. So the raspberry thing is weird, it does not come through at all. This goes inline with what I heard about lambics that lambic brewers add some cherries to a framboise because raspberries completely ferment out. With this beer, the color isn’t even reddish. A nice funk only version of a lambic.

750ml via trade with goryshkewych, shared at my Halloween tasting, 2009. Pours orange with a tan ring. Nose is tart with some razz in there as well. Taste is sweet and tart, I like it a lot, very nice beer, with yup some marzipan notes in it as KimJohansen noted.

750ml bottle, batch 1 courtesy of MrBendo. Light gusher. Poured a deeper orangish-reddish-golden-amber (can you tell I couldn’t quite nail down the color) with a large sized head. Some floaters. Aromas of raspberries, woody, vanilla, and some brett funkiness. Tastes of raspberries, vanilla, lighter woodiness, and again some brett funkiness. Nice sour and tart finish. Yep, raspberries is still my favorite for beer...

Thanks to Bobby91w for a sample. This was incredibly impressive. Pour is bubbly light brown red with a small white head. Aroma is raspberry, funky and wild yeast. Flavor is tart raspberry, barnyard funk, brett, wild yeast. Has a clean, crisp aftertaste that makes u want more.

Sampled from 750 ml bottle and shared by Bobby91w and Bulldogp04 during Surly D-Day. Pours a hazy and earthy magenta lambic with a nice fizzy off-white head that dissipates clean. Aroma of tart raspberries, barnyard funk, a hint of berry-fruity Cabernet Sauvignon, and a touch of old musty cellar. Taste is medium bodied, plenty of carbonation, flavors of tart raspberries, yeast and some brett funk. Finish has a mild and dry tart raspberry aftertaste that slowly disappears.
