Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole raspberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

bottle shared by psprings along side of too many other upland lambics!...

pours a murky pink color similar to freshly squeezed pink grapefruit juice with no head. it smells a bit tart... like uncooked fresh raspberries... sort of. it is rather indistinguishable unless you are really digging for it.... mixed with some mineral notes and pale but unsweetened malt. the palate is fortunately dry but lacking any real character... faint tart raspberry, mineral, pale grain and barely a funk. medium body adds a bit of chalkiness to an otherwise watery mouth feel... 6/5/6/3/14/3.4

My Bottom Line:
This immature P-Lambic develops enough tartness amidst its Fruit Loops-like quirkiness, but its juicy fruitiness, lack of funk and simplicity are disappointing.

Further Personal Perceptions:
-There is not much head atop the cloudy pink.
-This Fruit Loops-like character I’m getting might be the combination of lactobacillus, low carbonation and underlying sweet cereals.
-This was very drinkable, but felt underdeveloped to say the least. I would have been angry if I had paid lots of $$$ for bottles of this latest release.
-That being said, I know these guys can brew fantastic P-Lambics, so I will keep trying them out. I will be careful though...

Sampled at hellbilly’s hellraiser 3 gathering. Bottle courtesy of psprings. Pours the color of ruby red grapefruit juice with a thin head. Sweet and sour berry aroma. Flavor is slightly sour raspberries, wood and a bit of funk. Pretty good stuff. Thanks Paul!

750ml bottle courtesy of ygtbsm. Big fresh natural raspberry aroma. Quality stuff. The raspberries flavor is refreshingly sour but mild and natural. Murky pink-ornage color. Smooth mouthfeel. Awesome.

(750ml bottle, thanks ygbtbsm) Minimal white head atop hazy orange body. Aroma is medium sweet, raspberry, some funk/sour. Taste is medium sweet, raspberry sourness, light funk, wood. Light carbonation, light-medium body.

75cl bottle shared by YGTBSM. Mostly pink color with a hint of orange and a small head. Bright raspberry, with tart acidity, light funk, and a bit of cranberry in the aroma. Light berry sweetness balanced by a light tartness. Not as sour as the blueberry, and richer in the finish. Lightly carbonated but enough to move it over the palate. Mild, but pretty tasty stuff.

Bottle shared via psprings @ the Hellbilly Hellraiser 3.0 Tasting...THANKS PAUL!!! Ruby red grapefruit in color without a head to speak of. Aroma is of sour, unripened fruit. Again, can’t really distinguish that this is raspberry...but tasty. Lemon zest, vinegar, and funk. Not thick and viscous, not thin and watery. Right down the middle.
