Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole raspberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottle shared via psprings @ the Hellbilly Hellraiser 3.0 Tasting...THANKS PAUL!!! Ruby red grapefruit in color without a head to speak of. Aroma is of sour, unripened fruit. Again, can’t really distinguish that this is raspberry...but tasty. Lemon zest, vinegar, and funk. Not thick and viscous, not thin and watery. Right down the middle.

Orangish-pink color with a small whte head. Aroma is of raspberries, perfume, and dishsoap. Taste is tart with fresh raspberry.

Bottle shared by psprings at hellbilly’s hellraiser 3.0 tasting. Pours a tequila sunrise yellow with reddish hints and a small head. The nose is sweet raspberries and light sour funk. The taste is sour raspberries, light wine vinegar and malt. Medium mouth feel. Good – thanks Paul!

2008 bottle. Briliant amber color with a slight white head. Good aroma is barnyard lite, with tart fruit and wood. Prickly carbonation and mildly sour throughout. Lightly sweet raspberry flesh flavor with leather and moldy wood notes. This one should have been aged longer.

Batch 1 shared by MrBendo! Thanks Todd! Popped the cork and lots of foam- gusher like- nice fluffy foamy head on top of a murky hazy deep amber violet body. Aroma is nice tart raspberries, tons of lacto and brett horsey funk- cross between a farmhousey earthy funk and a lambic sour funk- moderate wood and oak as well. Flavor is a bit more oaky with a bit phenolic and vanilla - tons of fresh tart raspberries that give a nice sharp bite on the tongue- almost a bit prickly and tons of lactic lambic-like funk- sour finish. Awesome.

Bottle received from StFun. Pour was hazy orange/pink with nice lingering carbonation. Aroma of very tart raspberries. Flavor starts out mellow and raspberry and finishes with a little strawberry tartness. My first Upland lambic rating, and hopefully not my last; a very nice brew!

Bottle thanks to bu11zeye. Smell is raspberrires, tartness, slight horsey and barnyard. The look is orange to red in color with a small white head. The taste is fruity, some raspberries, dry. Thin and dry with some wood in the flavor.
