Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole raspberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottled. An unclear golden beer with the meat of lemons and oranges floating around and with no head. The aroma is sweet with notes of citrusy fruits. The flavor has notes of lemons, sweet malt, and other fruits. Raspberries?

Bottle 75 cl. Courtesy of KimJohansen. Hazy orangey golden with a small off-white head. Very fresh berry-like aroma with some Brett. Light body, watery and flat. Notes of Brett and some burning acetone and again very fresh berries. Dry and lightly astringent tart finish. 290509

From bottle, blind #7. Pours cloudy orange with a fully gone head. Dense peachy and light acidic aroma. Dry acidic, slight phenolic and distinct peachy flavoured. Dry acidic flavoured finish. Light bodied. Lasting fruity and slight acetone touch into the very far finish.

Bottle #7 at Papsø’s blindtasting. Hazy orange coloured with huge white floaties and a small white head. Fruity aroma of oak, vanilla, brett and raspberries. Fruity flavour of brett and berries with notes of vanilla. Tart finish.

Blind tasting at Papsø’s
Depending on the lucky glass, it goes from hazy orange to disgusting muddy with clots; very unprofessional. There is light fruity aroma, raspberries, and some yeast too. The flavor is a bit better, clearly sour, harsh, lemony, with light raspberries, no sweetness, quite refreshing.

Hazy reddish amber with tiny white head. Sour aroma with raspberries and hints of barnyard. Sour flavour with raspberries, wood, barnyard and grapefruit notes. A bit more fruit and sourness and it woul be awesome.

(750ml bottle, thanks ygbtbsm) Minimal white head atop hazy orange body. Aroma is medium sweet, raspberry, some funk/sour. Taste is medium sweet, raspberry sourness, light funk, wood. Light carbonation, light-medium body.
