Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole strawberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Thanks to Jason for sharing this! Pink colored pour with a thin off white head. Seems like the carbonation is just starting to begin. Pleasant strawberry aroma. Leathery, horse blanket flavor. Not as acidic as I was hoping. I wonder if its going to become more sour the longer it ages? This would be an excellent gateway lambic

Had a bit of a gusher when I opened this one. Pours a cloudy pinkish orange with a small head. Aroma of funk and strawberries. Tart but not too tart.

750ml bottle shared by Odeed. Cloudy pinkish orange with a small offwhite head. Nose of funky horseblanket with light fruitiness. Flavor is strawberries, funky light tartness, and some sweetness.

I fear I have not had enough lambics to really give a fair review; nonetheless, I did not really enjoy this. It seemed rather flat. I expected some sourness and that was not a big deal. Seemed like it needed a bit more carbonation and the strawberry was not really noticeable. At $15 a bottle, my curiousity has been met and I have no desire to try again.

Shared by Odeed. A foggy orange juice color. Aroma is funky with horseblanket. Taste is lightly funky with a strawberry sweetness. A little sweet but better then I expected.

Bottle from Wise Guys in Merrillville, IN: It pours a tarnished bronze body with a very short lived bubbly head. No lacing. The aroma is tart fruit of some sort, sour grasses, vinegar, and barnyard funk. I cannot state with full truthfullness that I could identify the fruit in the flavor as strawberry, but it is a fruit, quite tart, of some sort. There are also light traces of a berry [of some sort] sweetness, dry hay, a soft soapiness, vinegar, oak, and Bretty funk. Acidic, sour finish - refreshing somehow. Very nice beer.

Bottle shared by pepsican. Poured a murky orange color with a pinkish tint and a white head. Attractive aroma of fruit vinegar, subdued strawberry, and funk. Light to medium bodied and a little acidic. Some sweetness emerged at the end. Buttery and oaky flavors with strawberry and subdued coconut. Nice.
