Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole strawberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottle. Aroma funky with barnyard, leather, pineapple, with semi-sweet strawberry inching in more and more once the nostrils are saturated with the funkier notes. Flavor a gorgeous blend of strawberry tartness, sourness, sweetness, the strawberry is really rounded out, though not at the expense of the bretty character that remains. Quite drinkable. I thought this one was splendid.

Bottle courtesy of SQNfan. Pours a light yellow, clear, with absolutely no head. Aroma is quite funky, with some sour and oak notes. Flavor is fruitier, with coconut. The strawberry really comes out in the finish as the beer warms. Lots of sour and tart notes and the light fruitiness from the strawberry. A very nice beer! I am glad I got the chance to try this one.

Courtesy StFun. Pours a cloudy burnt orange color, with a tiny off white head. Smells of sweet tannic fruits, sourness, hints of mild strawberry, and a touch of some funk. Liked the nose. The flavor however disappointed me. It was subdued for one, and it almost tasted like juice. It didnt have that typical lambic kick or bite to it and almost seemed way to easy drinking for this style. Nothing offensive about it, it tasted ok, just not what I was expecting or looking for with this style. Just mild strawberries and tannins. Not much else. Disappointing.

Poured from a corked 750ml bottle and served in a tumbler. This beer poured a cloudy, bright orange with some gold highlights and a bubbly head of foam that quickly faded into a ring. The aroma included strong oak and tart strawberries. The flavor was a bit on the sweet side. It was made up of macerated strawberries, oak, and some mild funky notes. The mouthfeel was light-bodied and refreshing. Lightly carbonated. I would have prefered a little more funky sourness, but this was still pretty nice.

This poured an almost hazy burnt orange in color with very little head but continued carbonation breaking the surface. The nose was tart and filled with funky brett and light strawberry that has an earthy/herbal edge. In the mouth it is tart and bitter with the strawberry becoming more prominent in the front of the palate. This fades to a sour lactic midpalate with the funk lingering on the finish. This is well-balanced and fresh just lacking a little punch in the midpalate.

Strong big stinky unblended lambic nose. Lactic sour crean tang. Flavor is a little light compared to a Cantillon lambic, which I like. I do not get any strawberry character at all. I am not missing that either. Medium body with lively carbonation and a dry finish. This is a really nice beer. Its not a strawberry beer. It is very approachable.

My first from this brewery, thanks Jon for bringing. It was a great changeup in a series of barleywines. In a word, nice. Fruity cloudy colour with significant white head and lace. The nose is decidely strawberry. Easy drinking, medium mouthfeel. Balanced, with oak and a bit of wild yeast notes.

Bottle... Murky golden ale with little to no head. Funky, acidic nose favors aged, sharp cheese and fruit, but not necessarily strawberries. Medium-bodied and milky with tingly carbonation. Tart, but not sour. There’s a little strawberry essence here that didn’t come through in the aroma. A touch sweet; ultra-subtle bitterness.
