Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole strawberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottle sample at Crown #19 tasting. Poured hazy orange amber color with an average fizzy white head that lasted with fair lacing. Good tart strwberry & woody aroma. Medium body with tingly texture and flat carbonation. Moderate sour&sweet fruity flavor with a solid tart fruit and small alcohol bite finish of moderate to long duration. Very good beer.

750, capped and corked. Thanks, Riverside! Murky light tannish amber with no head or lace. Enormous tart nose of strawberries, moss, a little bit of balsamic. Crisp, light body. Strawberry is the predominant mid-palate note. Mild tart finish. Nice stuff for sure.

Bottle: ’08 version. Okay, even though this brew has received amazing accolades I was still a bit apprehensive before I opened it...this is mainly due to my past opinions of Upland’s brews, which weren’t that highly regarded IMO. Caleb, you have found your calling...this shit is amazing! Golden pour with some reddish hints and a thin white head. Immediately upon opening the bottle I could smell the wonderful brettiness and knew that all of my past notions were not going to apply here. Lots of lactic tartness, cheese, wet hay and fruitiness going on with the strawberries really shining through as it warmed and opened up a bit. Not as highly carbonated as I would have liked but with age I’m sure that’ll improve. Flavor was a blast of tart, funky fruits, mildly dry and with very subtle hints of fresh strawberries and light citrus. On the finish there was an earthy/woodsy wine-like flavor that just rounded this out perfectly. This more than lives up to the hype!

Murcky peach in colour with a lingering but thin off-white coloured head, good lacing. The aroma has some strawberry in it but it was a bit indefined, sort of straight gueuze like. The flavour had some berries, not a whole lot of strawberry in this, more gueuze than fruit, some sweetness, lightly acidic. Tart and dry mouthfeel, medium body, medium/high carbonation. Finishes lingering, tart and dry.

I didn’t get a whole lot of strawberries out of this but if this was what their base lambic tasted like they should definitely bottle that. Fantastic stuff.

GTMW 08 - Pours milky yellow with a white head. The aroma is very sour and lactic with definite strawberries and a bit of smoothness. Light crisp body that has sharp carbonation. The taste is sour, lactic and acidic as all hell with tart strawberries. The finish stays lingering for a while with nice harsh sourness.

Bottle GTMW 2008 Wow! Lots of fruit: strawberry! Lactic, sweet aroma. Taste is also sour with lots of strawberry tartness and some dull fruitiness. Finishes with more puckering sourness. Awesome.

750ml Bottle, thanks to Axilla, shared at Ebenezer’s. Poured light hazy amber in color with a small ring of bubbly head. Aroma of brett, strawberry’s, and fairly sweet. Taste is very nicely tart with notes of Strawberries. Nice bubbly body, with a fair amount of puckering sourness. Awesome.

Special pouring during GTMW ’08 at 2 pm via 750 ml bottle. Thank goodness someone brought a corkscrew! Pours a hazy and dirty golden amber lambic with a fizzy off-white head that slowly dissipates clean. Aroma of tart strawberries, some yeast, a touch of barnyard funk, and a touch of powdered sugar. Taste is semi-tart berries and strawberries, even a touch of cherries. Finish continues a light strawberry tart aftertaste, a slight dry character with some nice yeast funk added.
