Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole strawberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Blind tasting at Papsø’s
Muddy orange color. Extreme aroma, sour, fruity, pungent, like a real Lambic; some cobwebs, nuts, and malt; very nice. It has a medium mouthfeel, with lemony sourness, and (this is original) creamy flavor (maybe due to the yeast), light nut touch. The final is quite puckery. Too bad I got soo much deposit in my glass, this is a real interesting beer.

Stratford tasting. Bottle, pours a hazy golden body with a white head. Light brett y berry funkiness, chewy tart mellon like berry character. Lacto and a leather woody finish. Nice.

Peachy/red slightly cloudy pour. Very berry tart aroma. A flavor that cries strawberry and on style to a T. Medium bodied with good carbonation. Very very nice beer.

Bottle 75cl. @ Papsoes blindtasting. [ Bottle #14. ]
Murky light to medium golden yellow orange color with virtually none head. Aroma is fruity, horseblanket, peaches, wood, brett, tart. Flavor is moderate to heavy sweet and acidc with a long duration. Very sharp tart fruity. Body is light medium, texture is watery to oily, carbonation is flat. [20090612]

Bottle courtesy of bulldogp04. Poured a light, hazy golden color with a thin off-white head. Lots of pedio in the nose with some hidden acidic strawberry notes, brett and wood. Light body with soft carbonation. Flavor is dominated by pedio and brett, berry flavors are definitely there but it’s a little hard to distinguish the strawberry. Finish is pretty tart. Good!

Light red tint to a golden body, almost a fair pink color, medium sized off white head and solid lacing. Sweet aroma with some musty fruits, strawberry forward. Medium to light, sour and acidic. Tart and refreshing. Mixed fruit flavors, dark with some tropical notes. Yeasty and fairly wild with a strong musty quality. Very good.

Cloudy muddy reddish pinkish with no head. Sweet and fruity aroma with some brett. No detectable strawberry and my least favorite of all the Upland Lambics I have had. Wierd and cheesy flavor.

Bottled. An unclear golden beer with a thin off-white head. The aroma is very acidic with notes of brettanomyces, wood, lacto, and lemon, as well as lighter notes of wood. The flavor is acidic with a light sweet touch and notes of wood, brettanomyces, lacto, peaches, and mango, leading to a tart finish.
