Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole strawberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

750 ml bottle, capped and corked courtesy of tjthresh. Pour is a hazed yellow golden with a smallish off white head that falls really quickly. Visible carbonation bubbles. Protein chunks and and floaties tumble into the glass. Aroma of oak wood, tart musty strawberries, and some yeastiness underneath that. The main smell is the oak, and its a bit harsh. Taste is tart sour strawberry initially, moving into the oak woodiness in the middle, finishing with harsh tannic earthiness - almost tastes like strawberry seeds. The fruit flavor is pleasant, and the oak adds quite a bit of depth. Nice flavor, though not quite as integrated as some of the other Upland Lambics. Palate is medium, low carbonation, approaching being flat. Thanks for sending me this one Tom.

bottle by way of ucusty... pours hazy and becomes murky by the end an orange hue with a fleeting white head. it smells like fresh unripe wet strawberries with the stems still on them... along with sour wheaty grain, minerals and tart notes. the palate starts off a bit sweet but finishes dry and almost sour. green strawberries are faint in the flavor as it is mostly grain, yeast, minerals and light wood. the body is medium with a tart dry mouth feel. 7/4/7/4/15/3.7

Bottle: I think I had most of the yeast in my glass because mine looked like a cloudy cider. What is very interesting is that I couldn’t detect any strawberry in the aroma. It had a nice bitter taste and the strawberry finish is faint.

Bottle: A hazy straw colored pour with no head. Nose is tart with light fruit. A little dry. The taste is lightly fruity with lots of dry, tart, and puckering notes. Just a light woody element. Very much a unflavored lambic feel up front with the light strawberry notes coming through in the tail. Thanks Toby for sharing!

Sampled at hellbilly’s hellraiser 3 gathering. Bottle courtesy of hellbilly. Cloudy pink-gold pour with some floaties and no head. Funky yeast and sour fruit in the aroma. Flavor of unripe strawberries and a bit of sour funk. Good stuff. Thanks Josh!

Clear amber with a white head. Nice barnyard aromas with seedy wood and tart fruit. Medium body. Mild to medium sourness throughout, with wood, light barnyard, and dry strawberry fruit flavors. This one is good n’ ripe right now.

Bottle courtesy of Josh @ Hellbilly’s Hellraiser 3.0 tasting...THANKS!!! Orange juice with a slight pinkish hue; gets more milky after every pour. Zero head, zero lacing. Perhaps a hint of unripe strawberry but predominantly lemon zest, grapefruit rind, and horseblanket. Again, as in the Blueberry, very little carbonation. I’ve really begun to enjoy sours...just didn’t really enjoy this.

Well going through my notes it seems I have two ratings of this to enter from about 7 months apart. Thanks to somebody at the jjpm tasting and to Brandon. Poured a hazy golden color with a white head. Foamed out of the bottle. The aroma was of leather and strawberry flesh. Tart with a lot of strawberry in the flavor. Light body with a lively mouthfeel. Poured a hazy gold. Aroma of dirty hay and horse (my favorite). It was so stinky good. Mild strawberry with light sulfur. Mild horse and tart fruity flavor. Very tasty. Light body and mildly acidic. (Brandon)
