Commercial Description:
In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber's Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole strawberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Bottle, courtesy of Bobby91w. Shared with Katie in Steamboat. Pours a cloudy golden color with some light white swirls and low carbonation. Tart, somewhat caustic aroma of wild yeast, horse blanket, old cheese, lemon zest and crisp strawberry. Beautiful flavor profile of tart yeast with lemon and hints of strawberry throughout. I honestly thought I was going to taste more strawberry here, but I didn’t. Some grass and hay notes stick out on the back end. A bit more strawberry and grapefruit and a nice touch of pungent acidity finish things off.

Thanks to Puzzl for sharing batch 2 (and Axilla for sharing batch 1 last summer). Batch 1 explodes immediately spewing suds everywhere as clarkVV tries to cap the bottle with his thumb (which makes things worse). Batch 2 is also at the poiint now where it foams up to a certain extent and almost gushes. Cloudy slight dirty pinkish color with a floamy spritzy head. Aroma is a bit dirty in batch 2 still some strawberry cheesecake going on but is old and muddled with the yeast and is a bit thinner and not quite as sour. Flavor is some old stale funked out strawberryw ith a pineapple like brett funk and a nice acidity. Batch 1 seemed more cleand and refined more raw lamibic funk character- a fresher strawberry cheesecake quality and just overall much better. 4.3 for batch 1 and 3.5 for batch 2 to get the average 3.9.

Bottle complement of Daknole. Muddy bright golden. Strawberry jam aroma belies its golden color. Soft carbonation but poured very fizzy. Lactic and pedio present. Not as fruity as it smells, more like a yogurt drink.

Very cloudy. Smells like it’s going to be sour with hints of strawberry, some brett and lots of pedio. Sweet/tart with creamy yoghurty character. Refreshing, although the yeast and mud detracts from the presentation.

Bottle shared at The Bruery tasting by puzzl. Pours a cloudy gold tinted apricot with a thin white head. Very pleasant aroma of tart strawberries along with some pineapple and just a bit of cabernet vinegar. The flavor is quite similar to the aroma with strawberries and pineapple both present along with just a touch of cabernet vinegar. Some mild oak in the flavor as well. Very enjoyable.

Thanks to Brandon for sharing this bottle. Deep pink-tinted golden brew topped by a thin white head. Aroma is quite soft and tart. A hint of lactic tartness and a bit of soft funkiness as well. The strawberry here is quite subtle but it definitely makes itself known, especially retronasally. A touch of light pineapple tartness mixed with a fairly prominent oaky contribution from the barrel. Soft lactic flavour with a soft sourness and a lingering peachy/berryish fruitiness. This is really quite nice.

Hazy straw color, with a pinkish tint - medium acetic kick in the nose up front - a nice wild character that seems very authentic for an American-made lambic - tart strawberry doesn’t overpower the qualities the bugs impart - soft oakiness in the aroma - moderately tart up front, followed by a lot of vanilla and oak through the middle, as well as a very organic strawberry flavor - some grainy character - a bit of lactic/yogurt-ish quality - drying, prickly acidity on the tail end, with a mild leathery presence - this is nicely balanced, with a lot of subtle, cheesy funk throughout - just the right amount of acidity throughout - very nice.

It seemed like a good time to crack this. Nice orange color with a good and healthy funk of a smell, barnyard and urine. Easy flavor with a sugary strawberry finish but not what I would call sweet, funky and tart but not sour. I would love to try a bottle of the base lambic used for these beers or maybe one day an Upland gueuze. The carbonation is a little low but still has a nice feel to it.
