I definitely like the sparkling ciders more than the still-ciders. The cork popped on this du Minot bottle and a mild, apple aroma filled the room. Nose of very sweet McIntosh apples. Amazingly no sugar is added to this cider during fermentation. Absolutely beautiful, fresh and refreshing flavour. Highly carbonated with a sweet and dry finish. Excellent! Extremely fresh apple aroma thrones over just baked bread undertones. It is very sweet, but doesn’t feel agressive, somehow as if the carbonation played the role of a balancing dryness at the beginning. Gets drier toward the ends, but leaves an apple skin kiss. Charming rustic character accompanies all along, but is at its best in mid-mouth where you can almost taste hay like flavors, maybe leather and branches even. Fitting palate. Excellent aroma of bread and apples, there’s also a mild sweetness that can be smelled. Very flavor of apples with bread, there’s a nice balance between sweetness and dryness. Aroma is sweet apple, slightly dusty, very slight vinegar note in the background. Flavour plays between sweet and tart apples, the sweet ones showing themselves jsut a bit more. A light note of vanilla can be found midway through with some bready notes. Dry finish with some lingering tart apple skin notes. Body is full, persistant fine carbonation. Pale yellow with a touch of chartreuse, the carbonation is lively and fluffy as the bubbles race to dissipate. Slightly oversweet and sticky, but a dryish finish coats the palate along with its apple-skin tartness. The carbonation is totally unlike the typically harsh cider found in most products. Pours a very light yellow-gold with lots of carbonation. Aroma of tart green apples with a very, very slight funkiness behind it. Flavour of fresh, crisp, tart apples, with a dry, slightly dusty finish. Very nice stuff that I could drink a lot of, and I don’t feel that way about ciders very often. The aroma is sweet, sort-of...with some alcohol and fruity champagne-like properties. Refreshing flavour - fruity, dusty apples with a good balance of tartness. Quite nice.
