Aroma is sort of vinegar filled at first, but softens up to a cidery type of fruit and tart. Mellow flavors with some barrel aged notes. Sweet and little bits of tart. Not as sour as anticipated and certainly no vinegar in the taste. I like a sour to be more of a sipper; I started to put this one away far to quickly. **Note: Once it warmed up to room temp, the flavors blended and balanced much better. Should have waited longer at first, but with improvement comes a few more points on the rating. Off white head without much retention. Smells strongly of balsamic vinegar, yeast, cherries, and grapes. Has a sharp up front taste, which proceeds to the feeling you have just ate a slice of bread.
