I paired this beer with cold radish kimchi and it was magical. The deep cherry flavour mixed well with the slight kick of the kimchi... creating a strange (but good) mix of thick sweet and spicy flavours. Saved a little for after dinner and continued to enjoy. Big sour cherry, oak, and balsamic vinegar. Maybe a little bit of strawberries and moss in there as well. Creamy medium body with active though soft carb. Mid-palate is a wonderful whirl of cherries, oak, and vinegar. Wonderful easy-drinking stuff; almost appropriate for sessioning and definitely appropriate for dessert. Aromas of berries, sugar, spice and wood. Flavour is fresh and sour at first, but ends with a good amount of sweetness. Lovely and very drinkable - I could drink this every day! Much has already been said on both extremes about this beer, and truthfully I was expecting to be repulsed. However, to the contrary, I experienced this as quite delightful. Sour and sweet, in both aroma and taste, a delicate and complex blend. Deep brownish red in color with off white head. Its aroma tastes much like balsalmic vinegar with hints of Worcestershire sauce. The aroma is deceiving, though and the flavor comes through with a beautiful sweet and sour profile. Lots of sugar and a very balanced finish hidden in the palate if you can dig through the nose and the initial flavor.
