Commercial Description:
From the tradition started by the monks of St. Francis of Paula in 1634 comes this warming beer of rich heritage. A dark, rich lager of sublime complexity and character, St. Victorious is created from multiple German malts. Laborious decoction mashing yields the choicest elements of the malt. Bottle cellared for 1 about year. Pours amber with a tan head. Smells of caramel, toffee, dark fruit, some rosey hints, roasted malt. Tastes of roasted malt, sweet caramel, some dark fruit, dry and peppery. Enjoyable.

Bottle. 12 oz. Pours hazy amber with a moderate biege head. Aroma of roasted malt, hops, cinnamon, raisins, and hints of apricot. Medium body with a warm mouthfeel and a creamy, smooth finish. Very good offering from Victory.

Deep red/mahogany color with very little head. Aroma is malty sweet. Rich malty flavor with underlying hop bite. Chocolate notes and finishes dry with faint hop flavor. Palate is quite full. On tap at Blind Tiger, NYC

12 oz, bb Dec 2, 09. Clear chestnut with reddish highlights and a small spit of foam. Aromas of chocolate, caramel, grilled corn and light smoky wood. Big front flavors of dark fruit, chocolate and caramel are barely checked by some earthy spiciness, a touch of smoky whiskey and woody hops. Medium body is tingly and finishes dry enough. Nice one.

Nice dopplebock. The appearance is beautiful, reddish brown, thick off-white head. The aroma is fruity, bready, very nice. The flavor is fruity, bready, caramel, some candy sugar. Very enjoyable as well. The finish is just right, a mildly bittering hop presence. Medium to med/thick mouthfeel. Well done.

Bottle. Poured a clear brown with small off white head. Aroma of caramel, toasted malt, light dark fruit. Taste is mianly malt with some caramel, spice,, yeast, fruit. Mouth is full bodied with some bitterness in the finish. Overall, an okay doppel. Nothing too special.

Pours a dark brown/amber with a tan/white head. Aroma is of caramel and of dried fruit. Full bodied. Taste is first sweet caramel with hints of chocolate, followed by sharp bitterness. Maybe not as complex as others but still a solid example.

Pours a really nice looking ruby red color with a thin off white head. Aroma is malt and sawdust, something very dry in there. Flavor is underwhelming to say the least. A little sweet, a little roast malt but overall, there’s not much happening here. Definitely better doppelbocks to be found.
