Commercial Description:
Our dry cider is crafted from heirloom apple varieties that are renowned for their rich tannins and spicy aromas. This cider was fermented and aged in an untoasted Oregon white oak barrels to create a full bodied dry cider with nice balance and complexity. This sophisticated cider with compliment a multitude of dishes.

Bottle courtesy of EDA. Pale straw colour. The aroma is nice. Quite a pronounced tartness. Soft appley nose with a distict Jolly Rancher fruitiness. Flavour is crisp and tart. It’s fairly simple, but it’s good.

750mL bottle from The Trappist, no date. Clear golden with a small bubbly white head (despite an aggressive pour) low retention. Lots of ripe (but tart)apples up front with some honey notes. Only a hint of oak is present. Oak is more present in the flavor, though still not dominant. The aroma was actually fairly sweet, whereas the flavor had almost no sweetness. Dry finish with a little bit of lemony tartness, alcohol masked completely. Light carbonation with a surprisingly light body. Pretty good cider.

Bottle. Pours a clear, golden hue with no head. Aroma is of apples, whiskey, and some peaches. Flavor - same as aroma basically. Light, syrupy mouthfeel with light carbonation. Pretty Darn Good!!

Bottle. Sent in a picture to be uploaded. Pours with no head and a dehydrated yellow body. Light legs. Aroma has some sweetness, dry apples, light normandie corkiness. Taste is very dry with light crab apple bitterness. Very dry finish with a hint of oak. Light alcohol (for 8%). Very dry mouthfeel, lively bubbles...

Very little head on a golden body. Apple aroma. Flavors of apple juice, a touch of wood, and dry, dry, dry. Tart and clean, worked nicely with Thanksgiving dinner. Carbonation dissipated rapidly leaving a mostly still glass.

clear, still-looking bronze apple juice. Nose of simple apple-juice and maybe a pinch of nutmeg. Very dry apple flavors..almost too dry. I’m not getting any complexity...no wood, no funk, no yeast, nothing but dry apple flavors. I like the fact that’s not sweet though.. I would say it was clean, but it tastes a bit oxidized.

Golden-yellow colour. Light sparkle and some legs. Fresh apple nose with a little bit of skin and spice. Tart, almost leathery with fresh apple. Complex yet drinkable and clean. Solid cider.

Light amber/gold no head. Aroma is macintosh apples, oak, vanilla, cinnamon. Taste is also macintosh apples, slight acidity, light oakiness, has some of the natural wild yeasts sneeking through.
