Taste is sweet at first, then dry, then finishes, tart/sour. It is sourness/acidity is enough to make me think that my bottle might have a bit of brett or some other wild yeast in it (but in a pleasant way). Water like mouthfeel. Lighly fizzy. This cider was on the sweeter side, light tartness up front and mild acidity, then nice sweet apple flavor followed. Enjoyable sweeter cider. Aroma is floral, sweet light malt (hay) and a green apple, grape nose. Tart green apple, slightly sweet and moderately acidic flavor that makes your mouth water, even as you drink, alcohol notes near the end. Light but firm body, clean palate. Aubrey (2563), Denver, Colorado, USA Apr 24, 2006 Bright gold hue. Spritzy, vinous texture. Kind of like sweet white wine, but with a healthy amount of sourness. Nice apple aromas, and they didn’t smack me in the face like some ciders I’ve had. Reminiscent of mead, in a way. Seemed fairly clean. Pleasantly drinkable.
