Commercial Description:
Waterloo Tripel is brewed on huge amounts of pilsener malt. Aromatic Saazer and Spalter hops are added, but to no further extent than to give it a bitterness equal to a pilsener which gives more room to the beer’s sweetness. The beer is fermented with Du Bocq’s original yeast strain which is responsible for the delicate, spicy expression. After maturation and filtration the beer has a secondary fermentation in the bottle which causes its slight cloudiness.

Bottle (purchased at Rudat’s, Dortmund): Pale golden, visible sediments, creamy, never collapsing, lacing white head, distinctive lemony-fruity nose, mixed with the aroma of lemon-peel and shy aromatic hops; sweet flavour, full bodied, silky MF; sweet finish with shy hops and a light tartness around. well drinkable brew with well hidden alcohol, not too complex........

33 cL bottle. Pours cloudy orange with a lacing white head. Spiced and slight rubber like yeast aroma. Flavour is medium dry and distinct coriander flavoured. Light yeasty and caramelish touch too. Lingering yeasty and spiced finish, stays quite dry.

Bottle at Monk, Brussels, 25-07-08 This beer was served in an earthenware mug like the dubbel so colour was difficult to determine (appeared golden) some light fruits and spices on the nose, flavour was similar but little sweet, bit malty its fine but dressing something up by presenting it in an expensive earthenware mug (which Barry later liberated) isn’t going to make it taste any better.

Bottled. Golden colour with some small particles floating around. Small white head. Aroma is wooden, a bit sour as well as interesting bittery notes. Flavour is bittery wood with some hints of apple and grassyness. Hides the alcohol very well, making it a wellbalanced and nice refreshing brew.

Bottle at Les Brasseurs de la Grand Place in Brussels. Light copper gold color with a white smear for head. Light fruity (apple?) aroma. Medium body with strong prickles of carbonation - which softens to near creamy very quickly. Starts with appley fruit. Very mild bitter. Finishes rather clean and crisp. Feels good in the mouth. It is quite dry. Discussed with the server, and he opined it is very cidery.

Bottle. Has a clear yellow body and a white head. Has some yeastflaces in. Aroma is yeasty and peppry. Flavor is flovery. This on is to thin and has no complexity at all.
