Commercial Description:
The Dabinett is a classic English bittersweet cider apple that we grow at our Catamount Hill Orchard. In the past we have blended it with other apples, usually using thirty to forty percent Dabinett. This year it is close to being a straight varietal, about 94% Dabinett. Let’s say it is interesting: it tastes of the branches as well as the apple. There is dark fruit upfront, with a tannic over layer that persists long after the bottom seems to have disappeared. Its big bodied, and very drinkable..

Bouteille verte de 750 ml, avec bouchon de liège, partagée lors d’une dégustation Ratebeer Montréal chez Goldorak. Arôme: Légère odeur de pommes. Apparence: La couleur est cuivrée avec une très faible densité de bulles. Saveur: Léger goût de pommes et d’érable légèrement brûlé. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement huileuse. Moyenne effervescence en bouche. Légère présence de pommes confites en arrière goût. (Rating #2405)

750 ml bottle, 2003 vintage, from Table and Vine in Northampton, MA (early 2004), sampled starting at fridge temperature in a Lindemans flute. No pop to the cork and very little head forming atop the dark amber-gold, mostly still body....sweet, intense apple aroma with a nice hint of tartness, a touch of oak and a bit of the farm....perhaps a touch of brettanomyces as well?....fairly dry, tart and mineralic body, somewhat thin and watery but full of juice, becoming bitter and a bit chalky to finish.....tannic qualities evident as well, this is an interesting mix of sweet juiciness and fairly intense funk/vinous qualities that just needs a bit more depth and body and perhaps more than the faint hint it offers of carbonation. Could well be past its prime....I’m definitely intrigued to try a fresher bottle.
