Commercial Description:
Our family makes this hard cider from fresh pressed Baldwin apples Fermented with wild yeast, and followed by secondary malic-lactic fermentation, yielding a very smooth and very dry cider.

750 ml bottle undated but purchased at Table & Vine in Northampton, MA in spring 2004, served chilled in a St. Ambroise glass. Very clear slightly oily golden color with light bubbling head that dies immediately.....fresh, dry, sour/acidic aroma with hints of caramel and faint woodsmoke....rather dry body as well, slightly tart and woody, mineralic and a touch sour/farmy towards the finish....still, fairly thin and somewhat lifeless body; alcohol becomes strongly present quickly. Certainly not a commercial, macro-cider, but not very interesting either for all its artisanal nature.

Pale yellow. Faint granny-smith like nose. Dry, crisp, acidic, kind of thin in the flavor department, yet very interesting. Finishes dry and sort of funky, lactic acid?

Has a very light yellow color with no carbonation and a light apple smell. Taste is light/crisp with a slight alcohol flavor and finishes pretty dry. Overall I did not like this cider at all as it did not have much flavor and the flavor it had was not of cider/apples.
