A nice yeast-filled, fruity and malty nose. The flavor is excellent; smooth, loads of dark fruits, yeast, some dry notes, but very flavorful. A toasted malt profile also. Dégustée dans un calice Westmalle original. Le nez est assez discret. On remarque entre autre de la levure, du chocolat, des raisins secs et un soupçon de vanille. En apparence, le liquide est foncé et d’une magnifique couleur rubis sous la lumière. Une mince couche de mousse s’estompe lentement. On remarque également de minuscules sédiments en suspend dans la bière. En bouche, dès que l’on avale, un picotement remarqué se fait ressentir. La bière est très effervescente. Cela lui donne du corps et une sensation de velouté/douceur par la suite. C’est sucré (chocolat/raisin) et amer (levure), mais le tout est si équilibré qu’on doit bien réfléchir lorsqu’on décortique cette bière. En finale, c’est l’amertume de la levure et un léger goût de vanille qui ressort. Bière dégustée en accompagnement d’un rôti de porc aux pommes et aux pruneaux ayant mijoté 9 heures. Un accompagnement idéal. Une grande bière trappiste, humble et sans haute voltige, mais remarquable pas son équilibre. Pours murky brown with an off-white head that subsides fairly quickly. Aroma is very strong, with sweet honey, caramel, cherry, dark fruit, and biscuit. Very promising. Flavor is equally sweet and dominated by honey and caramel flavors, with touches of cherry and grape as well as some light apple flavors. Strong carbonation. Aroma reminds me a bit more of a doppelbock than that of a world famous dubbel... Caramel and dark fruits waft in and then, the scent that ruins the experience for me... New Sneaker smell... From that moment on all i smell and taste is new sneakers, i tried, i wrote down caramel, almost winelike in texture, slightly vinegarous(sour), but i kept coming back to New Sneakers... The bottle was most definitely not old, and kept in good temp for the duration...
