A reddish brown trappist ale, malty and fruit, featuring a 3 week secondary fermentation.

330ml bottle. Very dark, light healthy off-white head. Aroma ranges from apple and peach initially to raisin and plum, with candifloss present too. Lively carbonation, a little too much perhaps. Taste follows the same pattern as the aroma, very mellow and with a sweet richly-roasted malty taste, verging on coffee but with also sweet fleshy fruit too.

Bottle. Dark Brown Colour, creamy head but not long, very powerful in the beginning. Slight yeast taste, long dry aftertaste. The hop taste is very subtle and well done. A masterpiece!

Pours a dark brown copper with a think ass head... 2-3 inches. Tinny sweetness on the nose and slight metallic on the tongue on initial taste. A little on the dried fruits, more grape-like than anything. Tart, and malty on second swallow in the mouth. Musty yeast on the nose, slight bitterness on the sides on the tongue... medium mouthfeel (thickness). (Bottle Pour 1/5/2008)

Pours a hazy brown color with a super thick creamy head.Lots of carbonation going on here. Aromas of caramel, raisins and a hint of bananas. Flavor is of of malts and and dark fruits.Hints of bananas peaking out as well. A slight tangy bitterness to finish this brew out. Thanks Ubamartian!

I think this was just too carbonated for this style. Aroma was a little weaker than I expected. The malt is what this beer does best, and it does it pretty well... appearance was great, but I expected a little more on the flavor... re-rate Drank at something more akin to cellar temp... much better this way. Flavors pop a little more. Heavy on the dried fruity flavors. Dark roasted caramel flavors as well. Aroma is still weak for the style. Mouthfeel was also much better as the first was a bit too carbonated..

Hazy brown with nice lasting creamy head. Malty aroma with overripe fruits. Malty flavor with raisins. plums and a discrete sourness. Perfect balance. A classic.

Bottle. Poured a deep ruby red, with a tam head that did not last as long as expected. A nice dubbel, but I’ve actually made some just as good or better. IMHO, not as good as Chimay. The bottle I had was about a year old, I imagine a fresher bottle would be better.

After dumping this into a trappist glass it foamed right up then faded out just as quick leaveing a thin golden and tan head with a redish brown color. This beer is full of suspended yeast particles that move as bubbles rise to the surface. The aroma is very floral and hoppy with some hints of pitted fruits. When i took my first sip my mouth was overwelmed with bitter hops and some hints of fruit and all of that dried right up. There is a nice cherry bitterness mixed in with the carbonation, also the yeast particles seem to pop on your lips as you sip on the beer. This beer does have the drying effect since after it is no longer in your mouth your palate becomes completly dry.
