Mostly cloudy, ruddy, cedar bark brown colored body with a thick layer of fizzy cream head. Distinctive yeast profile that contains hints of toasted coconut and raisin esters along with a perfumey phenolic spice. Hints of chocolate fudge and prune. Medium bodied, heavily carbonated mouthfeel with a soft, almost creamy texture. Sweet malt flavors of raisins, toasted nuts, and cocoa up front on the palate, developing more of a tannic, prune skin dryness toward the finish. The yeast contributes a bright, white pepper quality toward the finish, enhancing the perception of dryness. Low levels of hop bitterness left lingering on the palate. A well deserved world classic. This time I picked put a spicey apple fruity calvados and port wine aroma and flavour I was not able to quite pin down before. Perhaps this one was a little on the lighter side compared to the others as far as flavours go but still an damn fine beer. I also got this celery and chicken noodle soup tang thing that crops up occasionally in nearly all the trappistes - I’d really like to know what that is? Everything else in previous rating stands.
Second rating 7/7/2002 4.4 Dense brown-red murky colour with large fluffy mid-tan head, nice lacing as well. Gorgeous complex floral aromatic and spicey nose and flavours. Superb body and nicely balanced palate and finish. One of my favourite beers made even better by drinking it with a meal at an small Belgian streetcafe on a mild summers evening.

Giant, fizzy, off-white head diminishes quickly. Caramel/Nutty malts; flowery hops; earthy yeast. Raisin, alcohol / solvent aromas along with some darkly sweet aromas. Moderately sweet / lightly acidic start and a lightly sweet /lightly acidic / moderately bitter finish. Extremely carbonated watery body.
