I did not recognize the base beer at all. Not that it’s a small beer, but it had been just eaten up by the overwhelming, rather astringent wooden show-robber. Strongly alcoholic. Aroma is of alcohol, vanilla, fermented fruits and wood. Flavor is slightly sweet with vanilla, dark fruits, and bourbon whiskey. A definite alcohol burn going down. Pours a murky brown color with a small white head that soon dissipates. The aroma is moderate in strength with a good whiff of vanilla, dark fruits and a touch of cola. The flavors focus on the same tastes as the aroma with a bit of light whiskey filling in the back end. The mouthfeel is silky smooth with lively carbonation. The finish is long with lingering oak. Overall: A very interesting brew, my first for this brewery. I think that this would age very well, it seems a bit young and immature. That aside it is a very good concoction. This Barrel-Aged Quadrupel’s flavor profile focuses way too much on its barrel flavors and alcohol heat for my tastes. The yeasty fruitiness is complex, but the malt character and the body seem to have suffered greatly from the lengthy barrel dip.
Further Personal Perceptions:
-That fruitiness roams from cherries to strawberry jam.
-There is a lot of straightforward sugar in the flavor profile; caramel or toastiness would have been more pleasant to me.
-The barrel apport is so tactless, it tastes like plywood.
-Alcohol burns in the back, certainly helped by the wooden dryness.
