Commercial Description:
Eleven is made with a single variety of hops, Phoenix, from the UK. Phoenix was developed at Wye College to be a high alpha acid (bitterness) hops with a British flavor profile. Phoenix is also low in cohumulone and high in aromatic oils, so you can throw a ton of ’em in and the beer will stay smooth and aromatic. This beer has 109 IBUs in it! The taste profile is incredibly balanced and dangerously drinkable for an 11.7% brew. But don’t look for that grapefruity-piny taste you get from US hops (not that there’s anything wrong with that), these buds are fruity and earthy with an almost berry-like aroma, to give this beer a unique taste among big IPAs. Bitterness we got! And malt to back it up, with the result being a very intriguing beer you’ll just want to sip all night thanks to Phoenix hops. Cheers!

Bottle: Pours an orange color with a pretty big foamy white head. Some malt and earthy hop aroma. Flavor is pretty malty but hop forward definitely. The hops are unique to say the least. I guess you would say they are earthy. They taste sorta like dirt and hemp, slightly spicy. I have never had this level of earthiness. Its very unique but frankly i really dont like the flavor, atleast not this much of it.

Bomber purchased from Ramsey Liquors, NJ. Pours an attractive cloudy amber with a thick manilla head. Earthy, pear-like floral nose. Very heavy, boozy, sweet and bitter. Flavor has strong notes of what can best be described as "earthiness" then comes notes of pear, caremel, bread, raisins, wood and tons of British hops. Prominent bitterness but not harsh. A nice resinous bitterness lingers on the tongue for hours. Alcohol very noticeable. The mouthfeel is THICK, like milkshake thick with nice fine-beaded carbonation. The best way I can describe this is if the English were to attempt a British Imperial IPA/Barleywine hybrid. Not really delicious but interesting.

Cloudy amber color with a bright orange hue, ample & creamy beige head, very soft & left a lot of lacing around the glass, nose full of grapefruit, caramel malt, cotton candy & yeast, extremely lively mouthfeel, seemed like a lot of spritzy carbonation, not as hoppy as I was expecting, they really only show through toward the back end of the body & in the finish, body was a lot lighter than I expected as well, flavors of citrus, light bread, caramel & alcohol, very warming alcohol effect in the finish, reminicent of a whiskey or brandy, lots of bitterness in the finish but not that dry-type of bitterness, it was offset by a big profile of malt & sweetness, I think this missed its mark a little bit, but not a bad beer, still drinkable & a decent beer to relax & enjoy with

Poured amber in color with a nice white head. Nice aroma of hops. Can definately taste the hops on the palate and the finish.

Very impressive carbonation levels, just like the Double Simcoe, show a very dense, creamy, off-white head that shows plenty of cascading, very strong retention and moderate lacing. Gotta give these guys credit for the next best thing after natural carbonation. Body is a clear, muted bronze-pineapple with medium-sized bubbles rising methodically.
Interesting hop nose, I thought. Pretty much true to the description, the Phoenix hop gives off tons of noble hop character, but just amped up about 5 times. Some citrus and pine still perceivable, obviously inevitable at this high an AA. Lots of dry, fruitskin-like flavors (hickory nut skin, nectarine, cumquat, passion fruit) and some peaches, lychee and light melon. Medium-high strength, with a dextrinous, pale maltiness staying mostly out of the way and creating a firm backbone. Alcohol is moderately perceived in the nose. It certainly could stand to be less, but at this abv, it’s not terribly obnoxious. A bit of dirtiness/cattiness on the finish, with a big glob of caramel thrown on the end as well.
The hops mimic the aroma, though are seemingly more diluted by the strong, nearly syrupy maltiness/heavy sweetness. Not quite cloying, and the carbonation helps break some of it up (though the carbonation loosens too quickly, being forced). But the dirty/catty hop notes are very evident and ruin the finish. And then there’s the alcohol. Ouch, this is among one of the most alcoholic beers I’ve ever tasted, both in actual strength and perceived strength. Raw, sharp and biting, it makes the beer EXTREMELY difficult to drink/enjoy. A few more sniffs of the moderately enjoyable aroma and I had to pour most of it out. Just way more malt and alcohol than it needs.

This one is not your traditional IPA. Amber hue with a nice volumness head, very substancial. Bitter, but not too bitter, thanks to the malt. More berry han citrus.

heavy grapefruit and pine. some orange and spice and corriander with a hint of carmel. more hoppy than malty. a little muddy earth flavor to it.

22 oz bottle shared with padrefan and some other guy. Golden orange pour with a very nice head. Lots of fruity citrus/apricot hops aromas. Flavors were not as grapefrutiy as I had expected, in fact it seemed a bit more hop forward than the bottle literiture seemed to indicate, but defintley hops in there. Very tasty
