Commercial Description:
Eleven is made with a single variety of hops, Phoenix, from the UK. Phoenix was developed at Wye College to be a high alpha acid (bitterness) hops with a British flavor profile. Phoenix is also low in cohumulone and high in aromatic oils, so you can throw a ton of ’em in and the beer will stay smooth and aromatic. This beer has 109 IBUs in it! The taste profile is incredibly balanced and dangerously drinkable for an 11.7% brew. But don’t look for that grapefruity-piny taste you get from US hops (not that there’s anything wrong with that), these buds are fruity and earthy with an almost berry-like aroma, to give this beer a unique taste among big IPAs. Bitterness we got! And malt to back it up, with the result being a very intriguing beer you’ll just want to sip all night thanks to Phoenix hops. Cheers!

Bottle. Pours a thick, brownish red color with an off-white head. Nose is full of hops. Very viscous, with tons of hops and malts getting into a little skirmish, but the hops are stronger. Some caramelized sweetness camoflauges the alcohol. Muddy mouthfeel became tedious as you continued through the brew. One glass is more than enough.

This was all hops, all the time. Muddy yellowish brown body. Nose of hops at the pour. Citrus and bitter taste, dry finish. Hops again.

Murky rusty brown color. Big sweaty and starchy nose with some mildew orange scents. Very coarse and bitter and sharp on the palate, extremely sharp and bitter all over, well into the finish. I didn’t think I would like this one very much, I don’t like really anything by Weyerbacher, but it’s actually quite good. Big orange and grapefruit flavors, very bitter almost to the point of being pungent or sour. I like.

Bottle thanks to Jan. Dark amber coloured with a medium sized tan head. Malty with strong notes of hops, pine and alcohol. Hints of caramel, oak and dark berries.

12 oz bottle: This was a lot more like an american barly wine than an ipa. aroma was sweet with notes of carmel malt and some english type hops that meld into the aroma of the malts. it poured much like a barly wine as well, thick and deep amber. flavor was somewhat bitter but very malty and pretty sweet. Not a real hop bomb in the sense of what we think of as hop taste. A bit too much of muddled flavors to be enjoyable, no clean malt or hop, or even good blend or the flavors. So this beer is a mess in flavor and not that great of a drinking experience, its not terrible, but I wouldn’t really buy more. An interesting experiment which I can appriciate, but a miss.

This one packs a solid punch of hops which seems strange given that I have difficulty locating the aroma. After a few sniffs, I get a glimpse that something hoppy and alcoholic is coming my way. The bitterly grapefruit, resin, pine, butterscotch, and grape-like flavors are all here with a touch of citrus. There is an interesting warm alcoholic kick emanating from each sip. I consider myself a hophead but have to say it somewhat lacks the cohesive balance found in Weyerbacher’s Double Simcoe. Its kind of like their version of Ruination with a higher abv. I will age this one along with Decadence to see where it goes.

Surprisingly little aroma, with a dark orange coloring. It is cloudy, chock full of suspended particles. I enjoyed the hoppy flavor and smooth mouthfeel, but I think I expected more, especially when it says "triple" IPA on the label. Overall, I would recommend it to lovers of the style.

Bottle: Hazy deep amber, large fluffy off-white head, clingy lacing.   Heavy malt nose, soft earthy pine tinge.   Notes of alcohol as well.   Seems syrupy.   Strong alcoholic hop biased strong ale.   Not as much malt to balance out the hop brashness.   A little rough around the edges, perhaps a bit too hot?   Fairly piney, in addition to the hop bitterness.   Average body and mouthfeel.   Finishes with a rough graininess, remains earthy.   This one is a bit too unfinished and hot to be really enjoyable.   At least let it settle down for some time before attempting.   Thanks Paul for the bottle!
