Commercial Description:
Eleven is made with a single variety of hops, Phoenix, from the UK. Phoenix was developed at Wye College to be a high alpha acid (bitterness) hops with a British flavor profile. Phoenix is also low in cohumulone and high in aromatic oils, so you can throw a ton of ’em in and the beer will stay smooth and aromatic. This beer has 109 IBUs in it! The taste profile is incredibly balanced and dangerously drinkable for an 11.7% brew. But don’t look for that grapefruity-piny taste you get from US hops (not that there’s anything wrong with that), these buds are fruity and earthy with an almost berry-like aroma, to give this beer a unique taste among big IPAs. Bitterness we got! And malt to back it up, with the result being a very intriguing beer you’ll just want to sip all night thanks to Phoenix hops. Cheers!

Thanks to Brewblackhole for sharing this one! Poured a nice copper color with a thick white head.Lots of carbonation in this guy! Big hop aroma,but also alot of alcohol aromas.Flavors of hop dominate this brew,followed by a malt backing.But then you get the numb your tongue alcohol flavor to it that went away the furthere you got into the brew.

Wet,soft hop aroma,is the main thing coming out of aroam,tase is a little harsh with hard hops. a mixture of different malts ,and just a ton of alcohol flying out of this. If I were going to a long tail gate,two bottles of this would be perfect

Maybe its the alcohol talking but I realy dont think so. This brew is fantabulous. Following are the actual notes without edit: Pours slightly hazy gold with big rocky head. Nose = Crisp hoppy sweet malt. First impression....Big....Godzilla big Lacing breaks and hangs about for a good long while after swirling. Nice mellow long aftertaste. Body is nice and hoppy yet not tastebud tweaking. It wont quit.... What a critter this one is........ Lets see if the head overflow from the glass stains the workbench. Impressive head, the lacing actually grows on itself. Upon return to the basement (the designated consumption area) after brief interlude outside hoppy nose is everpresent and similar to walking thru fog in feeling. This is most definitly a YUCK beer face from my wife. Again FANTABULOUS!! Re-Rate12/25/07 This seems to be getting a bit more bitter as time goes by. Nose is considerably weaker but body is still there as is lacing and carbonation. The finish is much more pronounced and hop tangy. I do hope they incorporate some of the lessons learned in this brew in future beers. So falls my up to this time Number one beer.

12 oz bottle purchased a long while back outside clevland. Pours a amber orange color, with a tall soapy beige head. Complex aroma that I am really enjoying, cookie, toffee, sweet, raisins, alcohol, oak, and cherry. Malty flavors, carmel, toffee hops alcohol, not as multi layered as the nose. Creamy medium to full body, with lots of heat in the finish. I’m glad I split this one, although I did enjoy it, that alcohol becomes a little too much.

A nice hazy orange head with a sweet grassy aroma. Taste is sweet, grapy, piny and the final impression is that this brew is more "alcoholic" sweet than average. Bitter finish!

Slight hazy copper with orange hue and a nice big offwhite head. Really to sweet... Got some citrus, malt, hops and spice. Hops is actually not so dominant, but so is the sweetness.. SHAME

Had this a few times since its been released, so here is an overall review. Pours out somewhat cloudy orange color with a medium white head. Aroma is hops, with slightly sweet malty note. Taste is floral/fruity hops with some sweet malts and a touch of fruit. Interesting beer with an interesting hop selection. Aging does mil out the hops and give a little more balance. Interesting effort.

THOUGHTS: Had this one New Year’s Day. I needed to go on a bit of a doctor-ordered personal prohibition for a little while, so this was the last beer I would drink for over a month and it was the perfect beer to tide me over. It was bitter like an Double IPA but a different bitter. Nice change of pace, but I still prefer something like the Double Simcoe or a Dogfish IPA. But definitely a nice one-time brew. When I first tried it in July, I could barely stomach all the bitterness, then I had it on tap at the Grey Lodge in September and it was great. Then this time, in January, it was even smoother, but unlike Decadence, I’m not disappointed that it was a one time run. It’s an acquired taste, but will probably be smoother in another year of two. Hides alcohol well in flavor and palate, but not so well in aroma. Nice to see Weyerbacher trying something a little different. TECHNICAL: Bottle, aged six months. Poured a hazy, medium orangey brown with a huge, off-white head that mostly diminished but left excellent lacing. The aroma was light to moderate molasses malt, moderate to heavy citrus (orange) hops along with some other fruitiness, maybe tart berries. Also earthy and a little alcohol. The initial flavor was moderately to heavily sweet, lightly acidic and lightly to moderately bitter, while the finish was moderately to heavily sweet and heavy to harsh bitterness with a long duration. Not as harsh a finish as some more grapefruit finishing IPAs, but note as pleasant either. Fairly well balanced but still a little too much bitter finish. The body was medium to full and syrupy with soft carbonation and somewhere between a heavy metallic and chalky finish.
