Commercial Description:
Eleven is made with a single variety of hops, Phoenix, from the UK. Phoenix was developed at Wye College to be a high alpha acid (bitterness) hops with a British flavor profile. Phoenix is also low in cohumulone and high in aromatic oils, so you can throw a ton of ’em in and the beer will stay smooth and aromatic. This beer has 109 IBUs in it! The taste profile is incredibly balanced and dangerously drinkable for an 11.7% brew. But don’t look for that grapefruity-piny taste you get from US hops (not that there’s anything wrong with that), these buds are fruity and earthy with an almost berry-like aroma, to give this beer a unique taste among big IPAs. Bitterness we got! And malt to back it up, with the result being a very intriguing beer you’ll just want to sip all night thanks to Phoenix hops. Cheers!

#958, Bottle, sampled at the Champaign Urbana Beer Club meeting in December of 2006. Hazy copper, thick frothy foamy medium lasting off brown head. Nose is more sweet and fruity with some thin hops. taste with a kick of hops and yeast, good with nice carbonation.

650ml Bottle @ Decemberfest 2006; thanks to HogTownHarry: Pours cloudy, pumpkin coloured, with a good sized foam head. Strong malts in the aroma with definite floral hops. Still, I can’t say I expected what was to come. That first touch on the tongue was caramel, and my notes then remark "HOP!!!" to explain what came next. 109 IBU is right, this is hop monster, but a very flavourful one at that. Surprisingly well balanced, as much as could be expected, with definite notable alcohol. Good stuff.

Bottle 750 ml @ Decemberfest.
Light haze, amber gold, smallish ring on top..
Rich fruity/alcoholic nose. Potent but pleasant nose which is uncommon these days.
Smoky, bitter, fruity, earthy and vegetables. Hmm interesting set up. A bit incoherent. Slightly chewy as well . Add to this mix very strong dose of alcohol , same goes to hops...got the picture?

Big head with soapy bubbles, with lace. Funky smell, astringency and drying finish in 109 ibu. Must keep drinking, for hop fix. Crwillis bottle, thanks Craig. Didn’t realize how high the alcohol was and it was hidden. Not best I have had for the style, which are often overated for me.

Draft. Light amber color with an off-white/ ivory head. Very piney aroma with a bit of oxidation. Sweet and meaty with a very thick mouth feel. Bitter finish.

12 oz Bottle via Frumpty and a few other traders (thanks!). Pours a dark hazy amber with a massive head. Not getting much from the nose here. Some subdued floral hops is about it. Hmm, perhaps it is too balanced to give off much aroma. The hops and malts seem to really be equal here. So much so, that i find it hard to discern any specific flavors or aromas. Wow and there is something in this that is giving me a serious sneeze attack and clogging my sinuses. I have had this happen threee times in the past and it was always with an IPA or IIPA. Must be one of the hops i am allergic too. In any case, i do taste some hoppy pine, orange, pineapples, and caramel malts. Some alcohol in the finish but it is not overpowrring nor does it burn. Full bodied, resiny/oily as well. Moderate carbonation. Decent and that is about it, and nowhere near as good as their Double Simcoe IIPA (which does not make me sneeze, lol)..

(Bottle 65 cl) Slightly hazy amber golden with a creamy, off-white head leaving laces. Fat, citrusy aroma. Extremely full body with lots of caramel and aroma hops. Very bitter finish. 021206

Bottle. Amber colour with a big tan head. Caramel malty, hoppy aroma and taste, alcoholic. Medium body with a dry light harsh, alcoholic finish.
