Commercial Description:
Eleven is made with a single variety of hops, Phoenix, from the UK. Phoenix was developed at Wye College to be a high alpha acid (bitterness) hops with a British flavor profile. Phoenix is also low in cohumulone and high in aromatic oils, so you can throw a ton of ’em in and the beer will stay smooth and aromatic. This beer has 109 IBUs in it! The taste profile is incredibly balanced and dangerously drinkable for an 11.7% brew. But don’t look for that grapefruity-piny taste you get from US hops (not that there’s anything wrong with that), these buds are fruity and earthy with an almost berry-like aroma, to give this beer a unique taste among big IPAs. Bitterness we got! And malt to back it up, with the result being a very intriguing beer you’ll just want to sip all night thanks to Phoenix hops. Cheers!

Lemon-citrus and field berry fruitiness in the earthy nose. Plenty of underlying toasty malt sweetness and a fair bit of alcohol round out the aroma. Opaque tan body is topped by a low tan fine bubbled head that recedes to cover. Plenty of hop flavour evokes lemongrass and wood with a floral-lavender character also. Once this passes, the huge malt sweetness and obvious alcohol are apparent. Still it manages to balance these nicely and although it is certainly extreme, it brings the flavours together well. Medium body with strong, engaging carbonation. Bottle sampled at Oakes’ Xmas tasting 2007.

This is the most extreme ipa I’ve ever encountered. The aroma is something of an active southernstill. The taste had an alcohol burn something like what I caught from that vegas stripper. Overall though, I have to rate this well, because of the balls this beer has.

22 oz. bomber poured into a pint glass. A big off-white head. Very cloudy orange. A pleasant wild grass/flower aroma lures you in, but then a hop profile so huge it’s almost medicinal comes in to slap your tongue around. Not sure if that’s a good thing. I’ve been drinking a lot of grapefruity west coast ipas lately, so this was an eye opener. Reading the description of a British flavor profile makes sense. There’s a certain balsa wood and prune flavor in there. This is challenging my idea of ipas. I think I like it.

on tap, Hop Devil, New York. frighteningly easy to drink given the strength. Well balanced, yet with almost over the top hops. Now this is what an IPA should taste like, not some bland 4% shite (Gr**n* K*ng kindly take note)

Copper; lingering head. Oopsy...a bit strong and rough, bitter and off...uh, but there was something aimed at that is distinct. Hummm...big hops, spice, bitterness, alcohol...but not a great balance...nice tryt hough!

Thanks to CaptainCougar for this one. Thick cloudy copper color with a great big off-white head. Thick copper color with good sized off-white head. Hoppy and somewhat sweet/alcohol nose. Flavor is big and bold with hops, yet that fades quickly to the sweet roast presence of the malty backing. Thick almost warm syrup texture was you can tell that it is above 10%. Really sweet, yet I liked it. I’m sure with the age of the bottle, the hops have faded away, yet I enjoyed it a lot. Thanks Tom!

Bottle. Cloudy orange pour with some off-white head. The hop aroma is a little medicinal and fruity, and overall it smells slightly like rubbing alcohol. The flavor is really strong alcohol, peppery, and the same medicinal / slightly fruity hops, and I can hardly drink it. It’s a little like sipping from a glass of vodka.

Apr. 2007 - Beer pours a dark, murky brown with caramel tones. Huge head and outstanding lacing. Really strong hoppiness dominates the aroma. Flavor starts with tons of sweet malts, vanilla, then a strong smokiness and a bitter hop finish. Overly bubbly mouthfeel and the bitterness hangs on my tongue when the beer is gone. A "big beer" in every respect, a true experience. Solid.
